I stumbled upon beef barbacoa through my students obsession with a Mexican grill I shall not name. They were constantly rushing out of class to try to make it there and back before lunch was over. Of course, the bright side of them catching my attention was that it encouraged me to check the place out. It was delicious and a dish I knew I wanted to make my way.
General Tso’s is a mouth watering dish with a kick of heat. After several conversations I’ve decided to add more meatless (or at least those that have fish) dishes. It’s important to me that everyone who follows the blog is happy and feels included. Though, I used to incorporate vegetarian dishes via Meatless Mondays I seem to have moved away from it. But I promise this dish will make up for it. The sauce in this General Tso’s Tofu has layers of flavor. All I can say is that it tastes like another bowl (and another and another).
Inhaling the aroma of this Moroccan lamb stew will make you drool. The mediterranean flavors developed in this dish made me wish I had bought the whole leg of lamb. It’s aromatic, delicious and savory with a hint of sweet from the apricots (if you choose to add it).

Sometimes it pays to be adventurous. One of the first dinners my dear friend from Costa Rica made for us was pastelon de platano maduro. Pastelón de platano de maduro is like a Costa Rican lasagna but you substitute the noodles out for bananas. When she first told me what she was making I was hesitant. But the mixture of the savory meat sauce with the sweet bananas is to die for.
Valentine’s day is coming and we’re making white chocolate cranberry hearts. Yay, chocolate. We try to teach our littles that gifts should come from the heart. It should show people you are thinking about them. So, for valentine’s day (and other holidays) we make our gifts with our hands and from our hearts.
Family dinner was perfect partially thanks to this French roasted chicken. It was just as savory and delicious as I could have hoped. The skin was crispy and the chicken was moist. Though it wasn’t made in a sheet pan, this would be a perfect sheet pan dinner. Sheet pan dinners are all the rave and I can understand why. What’s better than dirtying only one pot?
I’m not a football fan but this weekend is the Super Bowl and it’s always nice to have a snack. So for game day I’m making baked parmesan zucchini chips. Potato chips are a must have at any party. But since hubby and I have been working on getting this baby weight off, I thought zucchini chips would be slightly healthier to munch and crunch on.
