I love a soul warming chicken and rice dish (probably because I’m a carbaholic). And from a very young age, I loved Arroz con Pollo. Anytime I make it, it reminds me of my childhood. It’s like nothing but happiness on a plate. A nice moist chicken can be difficult but this Instant Pot Arroz con Pollo (Chicken with Rice) is not.
My little loves peanut butter and jelly but at school he wasn’t allowed to have any nut product. So when he was home it seemed as though he always wanted peanut butter and jelly. So, I am absolutely in love with breakfast burritos. Sometimes, if I have to think about breakfast it just doesn’t happen. So having a breakfast that’s easy to make takes the stress out of the morning (well at least that part of the morning). Best part… this recipe can be made ahead of time and thrown in the freezer. So…. I have a confession. I have a freezer full of carrots. I’ve been trying every carrot dish I’ve come across. But making breakfast as easy as possible has been my main focus since we’ve kicked off back to school. I love these Carrot Cake Overnight Oats. The first year I went to the New York City Food and Wine Festival I was enamored. We spent a lot of time talking to the chef from the Korean Food Foundation. I thought it was wonderful that they were encouraging people to cook more Korean food and to visit Korea to learn more about Korean culture and food.
