If you follow the blog you know that I am an advocate of using what I already have in the house. The other day I was looking for something sweet and I realized I had some frozen apricots left over from our Moroccan family dinner. Couscous can be served as either a savory or sweet dish. I’ve already made a savory dish so I decided it was time to try sweet. Presenting, my apricot raisin couscous cake.
Inhaling the aroma of this Moroccan lamb stew will make you drool. The mediterranean flavors developed in this dish made me wish I had bought the whole leg of lamb. It’s aromatic, delicious and savory with a hint of sweet from the apricots (if you choose to add it).
Sometimes I don’t get to have breakfast until the early afternoon. Of course, the issue with that is then I can’t decided whether I want breakfast or lunch. Does that ever happen to you? And you just can’t choose. Well, shakshuka solves all of these problems. The eggs give you that breakfast feel, but the spicy tomato sauce has that late night comfort feel to it.
