Summers are always eventful. To save time and get delicious meals on the table quickly, I’ve been relying on our pressure cooker. I’m happy to say this Instant Pot Chicken Gyro recipe made my day a little brighter because I was able to play with the kids.
I’ve been relying on my Instant Pot to get food done fast. These days I feel like I’m cooking everyday, two to three times a day. I guess that’s just Summer life. And as much as I love cooking, I love spending time with my family more.
I want to be outside in the sun playing soccer or something. So decided to build on an chicken recipe I’ve been playing with. I marinated the chicken in a yogurt mixture just to give it more flavor and keep it moist (especially since I’m using chicken breasts). I also am often called away from the kitchen so to prevent overcooking the chicken I allow it to natural pressure release.
And yes, you can still over cook food in a pressure cooker.
I’ve also made this dish with chicken thighs. Don’t stress though, use whatever boneless chicken you have on hand. Or don’t, I also have a recipe for Beef Gyros if you aren’t interested in chicken.
Makes 4-6 gyros
- 2 pounds boneless chicken breasts
- 1/4 cup Greek yogurt
- 6 garlic cloves, minced
- 1 tablespoon white wine vinegar
- 2 tablespoon olive oil (1 tablespoon reserved)
- 1 tablespoon oregano
- 1/4 teaspoon cumin
- 1 teaspoon salt
- black pepper
- 1 onion sliced
- 1 large lemon, juiced
- 1/2 cup chicken broth
- 1 cucumber, peeled & seeded
- 1 cup plain Greek yogurt
- 1/2 teaspoon garlic powder
- 1 tablespoon dried dill
- 1 tablespoon lemon juice
- Salt and pepper to taste
Tools: plastic zip top storage bag, pressure cooker, slotted spoon, grater and bowl
Use a fork to puncture chicken.
Place chicken, yogurt, garlic, white wine vinegar, lemon, olive oil, oregano, salt and pepper in a zip top bag and massage the chicken.
Add 1 tablespoon of olive oil into Instant Pot and press sauté.
Place onion slices in Instant Pot.
Once onions begin to turn translucent and brown, add marinated chicken.
Cancel sauté & cover with lid.
Press manual and set timer for 12 minutes.
Once done, allow to natural pressure release.
Remove lid. Chicken should be moist but tender.
Use a slotted spoon to remove chicken.
Cut cucumber in half lengthwise and use a teaspoon to scrape out seeds.
Grate half of cucumber. Then use a kitchen towel or paper towels to remove liquid.
Finely chop the other half of the cucumber.
Place cucumber in a bowl. Add remaining ingredients then mix to combine. Serve with gyros.
Now put those gyros together and eat until your heart is content.
