Chicken and Vegetable Ramen Noodle Stir Fry

I’ve been dying to make ramen noodles. Which is actually pretty interesting because  for years  (I mean years)  I never ate ramen. I mean not even in college. And that’s like the main time to eat ramen. Well this Chicken and Vegetable Ramen Noodle Stir Fry is nothing like those bagged college noodles and everything you and you family will want to eat.

So when did my love of Ramen start? Well, it was a cold day in Canada. Yup! Canada changed my taste buds. As an adult I went to a Ramen Noodle place in Canada and fell in love. Of course, the ramen from isn’t like that stuff you buy by the case in the discount store. It was delicious and refined and soul warming.

Then in a rush, I stopped at a noodle place that’s new to our neighborhood. I ordered a simple vegetable noodle bowl and was thoroughly disappointed. The only thing that’s worse than being really hungry and disliking what your eating is disliking overpriced food that’s not that good.

So, I decided to make my own. Let me tell you, this happens quite a bit in my house. It’s sucks having your taste buds all ready for something and they you are completely disappointed. Worst of all, you still have taste for that dish. So I headed to my local asian grocery store and got the ingredients I needed t put my cravings to rest.

But when I got home I couldn’t figure out exactly how I wanted to make my noodles. Did I want it sweet and salty or light with layers of flavors? In the end, I decide on a stir fry because though I do like a nice soup in the Summer, it just wasn’t in the mood for that. So, a ramen noodle stir fry was the next best thing.

Made a delicious sauce with chicken and noodles and loaded it up with vegetables. Pick your favorites and add it to the pot.  Did I mention I made this delicious in one -pot? Oh yeah. That means there’s plenty of time to make egg rolls or dumplings right?


Chicken and Vegetable Ramen Noodle Stir Fry


Makes 4 -6 servings


Stir Fry Sauce

  • 2 tablespoon rice vinegar
  • 2 tablespoon sesame oil (or olive oil)
  • 1/4 cup soy sauce
  • 2 tablespoon hoisin sauce
  • 2 teaspoons brown sugar
  • 1 tablespoon minced garlic
  • 1/2 tablespoon grated ginger

Chicken and Vegetable

  • 20 ounces ramen
  • 1 pound boneless chicken breast, cut 1 inch pieces
  • salt and pepper
  • 1 teaspoon Chinese Five Spice (optional)
  • 4 tablespoon vegetables oil, divided
  • 2 teaspoons garlic, minced
  • 2 teaspoons ginger, grated
  • 1 medium zucchini, diagonally sliced
  • 2 carrots, diagonally sliced
  • 6 ounces shiitake mushrooms
  • 1/2 red bell pepper, sliced
  • 2 scallions, chopped

Tools: medium bowllarge skillet or wok stir fry pan, silicon or steel spatula



In a medium sized bowl, whisk together stir fry ingredients and set aside.

Bring a medium pot of water to boil over high heat, and cook noodles according to package directions.

Chop chicken and season chicken with salt, pepper,  Chinese Five Spice and set aside.
Meanwhile, heat 2 tablespoons of oil in a large skillet or wok over medium-high heat until shimmering.
Then add chopped chicken (in a single layer). Cook 3 to 4 minutes on each side until browned and cooked through. Remove chicken from pan.
Lower heat to medium and add the remaining oil. Then add garlic, ginger, carrots, mushrooms, zucchini, peppers, and saute for about a minute.

Add chicken and noodle to  vegetables and drizzle sauce over the stir fry. Use a spatula to mix all the ingredients together well.
Use chopsticks or a large fork to gather noodles into a pile and place in the center of a boil. Garnish with scallions before serving.
