It was one of those days I was in the mood for shrimp. But not just any shrimp dish. Something comforting and warm. If you know me you’re saying “Of course, that’s how she decides what she’s making”. I think it’s the result of lots of interactions with people from high school. High school always reminds me of delicious Italian food. Creamy Shrimp Fettuccine Alfredo was the dish of choice.

Only time I went to fancy restaurants with my friends was when I was a teenager. This is typically a dish I would not make. Hubby has worn the alfredo crown since we’ve been together but I’ve been dying for this dish. I needed to whip something up quickly before my son’sĀ game and shrimp is always quick to cook so it was the perfect solution.

This dish only takes about 20 minutes to make but believe me it pulls no punches on flavor. I love the creaminess the cream cheese gives this dish. I decided to put it in because a while back I was talking to a lady in the grocery store and she said she puts cream cheese in her alfredo. And since right now we are swimming in cream cheese (lots of cream cheese frosting for cakes)

Creamy Shrimp Fettuccine Alfredo

Makes 4 – 6 servings

Ingredients
  • 1 box of fettuccine
  • 1 tablespoon olive oil
  • 2 1/2 dozen shrimp, peeled, deveined tails on
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 lemon, juiced
  • 2 teaspoons Italian seasoning (oregano, marjoram, thyme, basil, rosemary & sage)
  • 2 tablespoons butter
  • 1 teaspoon garlic, minced (2 cloves)
  • 1 tablespoon flour
  • 2 cups heavy cream
  • 2 ounces cream cheese
  • 1/4 cup parmesan
  • salt & pepper to taste
  • fresh parsley garnish

Tools: large pot, large pan, slotted spoon, whisk (or fork)

Directions

Make pasta according to directions. Drain and set aside.

While pasta cooks, add oil to a large pan over medium heat.

Add shrimp, salt, pepper, lemon juice and italian seasoning to pan.

Cook shrimp until pink, about 3 or 4 minutes.

Remove shrimp from pan.

Add butter and garlic to pan and stir.

Then stir flour into butter/garlic mixture.

Slowly whisk in cream until smooth.

Then whisk in cream cheese and parmesan cheese until completely melted.

Salt and pepper to taste. Then add cooked shrimp.

Serve shrimp and sauce over fettuccine noodles.

Top with fresh chopped parsley.

This dish really was perfect. It really hit the spot.
