These delicious Veggie Latkes (veggie pancakes) for Breakfast are a delightful way to your day started. 

There’s been a theme in our house this week. Little bites of deliciousness. I’ve fallen in love with several little bites books and it’s got my juices flowing. So, it’s been all about little bites. That’s probably I love the food bar ideas. What’s better than a delicious bite of yum you can pop in your mouth?

I figured I share another delicious and quick bite you can make a for Mother’s Day Brunch. Or you can serve it as a started before dinner. I love a good latke. It doesn’t matter with it’s potato or zucchini. That’s what makes these so great it’s a little bit of everything. Of course, if potatoes aren’t your thing you can swap it out for parsnips.

Lot’s of delicious dishes you can make for mother’s day. If your day is busier than you expected you might want to make you day a bit easy by making a bunch of little dishes for everyone to nosh on.

Delicious Veggie Latkes (veggie pancakes) for Breakfast

Makes 12 latkes


  • 1/2 onion, diced
  • 2 large russet potatoes, shredded
  • 1 pound zucchini, shredded
  • 1 pound carrots, shredded
  • 2 eggs, beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup parsley, chopped
  • 1/2 cup flour
  • oil for frying
  • apple sauce and/or sour cream for serving

Tools: grater, heavy bottom skillet, large bowl


Prep all ingredients by shredding and chopping before starting.

Pat vegetables with a clean dry towel to remove some of the moisture.

Add onions, shredded potatoes, carrots and zucchini to bowl.

Then add eggs and flour.

Mix until combined.

Place skillet over medium high heat and add oil.

Place 1/4 cup of vegetable mixture in to hot skillet.

Flatten vegetable mixture.

Cook for 2 to 3 minutes on each side until golden brown.

Removes veggie latkes from heat and repeat with the rest of your veggie mixture.

Top with sour cream, apple sauce or a poached egg. And your yum is done. Are you going to add this to your brunch menu?
