There’s nothing like a great scramble egg for breakfast. The other day I came across the Just Crack An Egg website. And it made me think, “obviously other people feel this way about breakfast too because there is a whole site dedicated to it.” That site inspired this Ham, Egg and Cheese Breakfast scramble post.
So, according to my fitness tracker, one of the most stressful times of the day for me is the morning. Though I get up at about 5:00 am there’s always so much to do. Work out, tutor students, take 10 minutes for myself and the list goes on and on.
Of course, there never seems to be enough time no matter how early in the morning I get up. Then on top of that, I always try to make sure my littles have something warm in their bellies in the morning.
As I continued to scan the Just Crack an Egg site, it actually cracked me up. If you’ve never heard of it and you are wondering what it is, the site is actually selling a Scrambled Egg Kit. Yup, there’s a kit for that.
But with this one. You still have to add the eggs. Sigh.
Now, I understand how important it is to start the morning off right. To try to keep the stress low which mean a no brainer, low maintenance breakfast. You can still have a great, delicious, nutritional low maintenance breakfast when you are short on time.
Now, I’m not going to lie. It to took me a minute to figure out what I needed to do to get a warm healthy breakfast on the table for the family. But buying a bowl full of stuff to make scrambled eggs (and it doesn’t include eggs) seems ludicrous.
You Can Make It Yourself!
Hey … you don’t need a bowl of anything. Not when you’ve got me. Most of breakfast recipes on El’s Kitchen Comforts are super quick to whip up in the morning. Which is perfect! That way you can get the family fed and out the door without stressing.
We have several make ahead recipes and quick breakfast recipes I make regularly. Including, this Ham Egg and Cheese Breakfast Scramble. All you need is a bowl, a non-stick pan and a spatula. That’s it.
This scramble really is a great breakfast for the family because it has a ton of protein from the ham, egg and cheese. And if your family complies, you can add some spinach to the eggs providing even more nutrition. I sometimes add a little avocado for some healthy fat. It’s like a home run of breakfast nutrition.
What I’m saying is, this breakfast bowl takes about 10 minutes to make from start to finish and it’s so much cheaper than those pre-made breakfast bowls you’ll find in the grocery store.

Ham Egg and Cheese Breakfast Scramble
Ham Egg and Cheese Breakfast Scramble
- 2 tablespoons butter
- 8 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cheddar cheese shredded
- 1/2 cup deli ham sliced
- Beat eggs, milk, salt and pepper in a medium bowl.
- Heat butter in a large non-stick skillet over medium heat until butter has melted and pan is hot.
- Pour egg mixture into pan and wait 30 seconds to 1 minute until to egg begins to set.
- Sprinkle ham over the top of eggs. Then with a spatula, gently use spatula to move eggs from one side of the pan to the other. Folding eggs and ham into each other.
- Once egg has thickened and no liquid egg remains, add shredded cheese and remove pan from heat.
- Serve immediately.
Recipe Note: You can freeze scrambled eggs. Make sure to let eggs cool completely. Then place a single servings of eggs flat in plastic wrap. Press all the air out. Then place in a freezer bag.
Make sure the thaw scrambled eggs completely in fridge or microwave before reheating.
