So what’s my solution? To keep it as simple as possible. This tomato Basil Bruschetta recipe is exactly that. It’s super easy and delicious. A couple of tips when you make this recipe. Don’t forget to toast your bread. I actually like to rub my bread with a garlic clove, then brush it with olive oil and toast it. Oh, and make sure to use a bread knife. It’ll make cutting much easier and quicker (it’s the long knife with the serrated edge).

How To Make Tomato Basil Bruschetta (and some other delicious ideas for this tomato recipe)
- 6 ripe plum tomatoes
- 1/2 shallot, minced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- 2 tablespoon of basil, sliced
- 1 teaspoon parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 french baguette or Italian bread
- 1/2 cup of olive oil
Garnish with additional basil or parmesan cheese
Tools: medium bowl, bread knife, baking sheet or panini press
Preheat oven 425 degrees (Skip step if using panini press).
Dice tomatoes then add to bowl with shallots, garlic, olive oil, vinegar, basil, parsley and salt ad pepper.
Use a bread knife to slice baguette.
Brush each side of bread with olive oil and toast bread in oven (or panini press).
After 5 to 6 minutes bread should be lightly toasted around the edges.
Top bread with tomato basil bruschetta mixture and serve.
