Pizza is one of our go-to weekend meals. Soooo, the other day I went down the Youtube rabbit hole and came across the chicken crust pizza recipe. It’s not the first time I’ve seen it but I’ve been looking for a way to keep our carbs lows and still enjoy our weekend meal.

This is a simple recipe you can make with your family. Sometimes keto recipes have a lot of ingredients and require low carb flours etc. This recipe does not. It only has 4 ingredients not including salt. And once you mix it all up all you have to do is flatten it.

  • sausage and mushrooms

Warning: this Keto chicken crust pizza recipe does not taste like a traditional pizza crust but it is delicious and very filling. In the past, I’ve had trouble hitting my protein Macros but with recipes like this not anymore.

Tips

  • If you’re looking for more fat use chicken thighs instead of chicken breast.
  • If you are short on time, use 3/4 lb can precooked canned chicken.
  • Make sure canned chicken is drained well before mixing with other ingredients.
  • Make sure the ingredients are completely combined.
  • Spread the crust thinly (about 1/4 inch thick).

Ingredients
  

  • 1 pound ground chicken breast
  • 1/2 cup parmesan cheese
  • 2 cloves garlic minced
  • 2 large eggs whisked
  • 1/2 teaspoon salt

Instructions
 

  • Preheat oven to 400 degrees F (204 degrees C). Line a pizza peel or baking sheet with parchment paper. 
  • In a large bowl, combine all the ingredients (including salt) and mix well.
  • Spread the chicken mixture onto parchment paper and then cover chicken with parchment or waxed paper.
  • Use rolling pin (on top of parchment/ waxed paper) to thin chicken out until it is 1/4 inch on all sides.
  • Remove the top piece of parchment paper and use the bottom sheet to slide chicken crust onto the baking sheet or pizza peel.
  • Bake for 20 minutes until firm and golden brown on the edges.
  • Let the crust rest for about 10 minutes and then add your toppings. Return chicken crust to oven and cook for an additional 10 minutes until cheese is melted.
