Maduros (Fried Sweet Plantains) are a staple in the Caribbean and Latin America. It’s delicious and very simple to make. A great way to start cooking Latin American food even if you are a novice cook. 

Maduros (fried sweet plantains) are a perfect starter dish if you are interested in Latin American food or looking to add a little sweetness to Cinco de Mayo. What what are maduros? It’s just fried banana but it’s so delicious. I’ve been making maduros for years and I was pleasantly surprised when I started to see it at our local supermarket. In the past I’ve had to find the closet Latin American market to purchase.

Maduros were one of the first dishes I learned how to make. I know simple enough but I was young and not really skilled in the kitchen. Sometimes we need that win in the kitchen. For me the key to the win was the plantains I picked. My friends mom finally shared that I had been picking the wrong plantains. I need the plantains that were black. Now, if you’ve ever seen a banana that had turned black you know why those weren’t the plantains I was picking.

But in this case, if you want a sweet and soft maduro you need to choose the black bananas over the yellow ones. The dark … sweeter and less starchyOnce I was able to pick better plantains I then worked on getting a nice crisp on it whenI fried. Just in case you couldn’t tell I can be a bit impatient. But wait … wait to get that crisp on that maduro. You will thank me for it.

This is the epitome of easy comfort food. When are you frying some up ?

Maduros (Fried Sweet Plantains)

Makes 4 – 6 servings


4 large plaintain

1 cup vegetable oil

Tools: sharp knife, skillet, paper towels


Trim ends of plantain and peel.

Cut plantain diagnally into 1 inch pieces.

In a large skillet, heat oil over medium high heat.

Carefully place plantain in oil.

Maduros (sweet Fried Plantain)

Fry for 2 minutes on each side until golden brown.

Place friend plantain on a paper towel lined plate or baking sheet.

Continue until you’ve cooked the all plantain slices.

A perfect little treat to add to your Cinco de Mayo get together. Even of you are not having a Cinco de Mayo party it works as a great snack for the family.
