The past week has been a whirling dervish of activity. The babies turned 1 on Wednesday and I just couldn’t contain my excitement. So much so that I made green Ninja Turtle Mac n Cheese.
My eldest picked the theme of Ninja Turtles for the babies’ birthday and I decided to go with it since it seemed fitting since I have 4 boys. It also thought it would be a fun party theme.
I wasn’t excited by the options I found but I knew there had to be other ways to make this theme work. I went with something I new would be a hit. Mac n Cheese. Making it fit the Ninja Turtle theme was a easy as adding Green Food Color.
I have a stove top Mac n Cheese recipe that absolutely loved by my eldest. So I started with that as a base. Most Mac n Cheese ball recipes are fried and covered with bread crumbs. I just sprinkled a little bit of bread crumbs on top. Rolling it in bread crumbs would defeat the purpose of turning the mac n cheese green.
Ninja Turtle Mac n Cheese
Makes 28 -32 cups
- 1 box elbow macaroni
- 4 tablespoons butter
- 2 tablespoons flour
- 8 ounces shredded cheddar cheese
- 2 ounces shredded empire jack cheese
- 1 egg beaten
- 1/2 cup milk
- salt and pepper to taste
- 4 to 6 drops green food coloring
- 1/4 cup of bread crumbs (optional)
Tools: 2 pots, whisk, spatula & silicone muffin pan
Preheat oven to 350 degrees fahrenheit.
Bring a large pot of salted water to a boil.
Add elbow macaroni noodles once boiling and follow box directions.
While macaroni cooks, melt butter in pot over medium heat.
Once butter has melted, slowly whisk in flour.
Whisk until mixture in smooth.
Then add cheddar cheese a handful at a time. Stirring continuously.
Whisk together egg and milk.
Decrease heat, then pour egg/milk mixture into pot and season with salt and pepper.
Add green food coloring 2 drops at a time until you’ve reached the desired color.
Then add in macaroni a cup at a time and mix until completely coated with cheese mixture.
Place a large spoonful of colored mac n cheese into each cup of the cupcake pan.
Sprinkle bread crumbs and additional cheese on top.
Place cupcake tins in oven and cook for 20 to 30 minutes.
Allow to cool and serve.
If you’re looking to embellish even more add a strip of red or orange pepper to make a mask. Or use a peeler to slice a sliver of carrot or tomato skin.

By the way, if you have a food safe paintbrush I bet you could paint some blue overalls & eyes on some mac n cheese for a minion party.
