So why make a whole chicken when you are short on time and cooking for a small army? Because it’s budget-friendly and delicious. I’ve made chicken gyros before and it was soooo tasty. Why not try it on a whole chicken?

We were having friends over and I needed to get an absolutely delicious dinner on the table. With everything that goes on with the littles, we don’t have people over the often for dinner anymore. So, when we do have people over I like to make something special and this quick roasted Greek split chicken was exactly that.

Why Split Chicken?

Splitting a whole chicken in half makes it cook quicker. Cutting it down the back cuts the roasting time in half. Woo hoo!! No more stressing over being in the kitchen when you want to hang with your friends. So, go ahead and split that chicken.

How to Split a Chicken?

The key to splitting a whole chicken is to use sharp kitchen shears to cut the chicken down the back. Then flip the chicken over and lay it flat skin side up. Press down on the chicken to break the breast bone. In the past, I’ve laid a piece of plastic wrap over the chicken and wacked it with my cast iron pan. Yes, use plastic wrap. You’d be surprised how pieces of chicken can fly. Ugh!

It’s a warming and inviting way to show your friends and family how much you love them.

Ingredients

  • 4 pound roaster chicken
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon dried oregano
  • 1/2 tablespoon dried cumin
  • 1/2 cup greek yogurt
  • 1 large lemon juiced
  • 2 tablespoon olive oil

Instructions

  • Clean chicken by removing any remaining hair or feathers.
  • Place cleaned chicken on a slip-proof cutting board. Using sharp kitchen shears cut down the back of the chicken (make sure to hold the chicken tightly and cut away from you). Then turn the chicken over and lay it flat on your cutting board. Press down firmly to break the breast bone and flatten the chicken completely.
  • Season chicken with salt, pepper, oregano, and cumin. Rub the seasoning into the chicken.
  • In a large bowl or plastic storage bag combine yogurt, olive oil and lemon juice. Place seasoned chicken into the yogurt mixture and massage mixture into the chicken. Allow chicken to marinate in yogurt mixture for 20 to 30 minutes.
  • Preheat oven to 450 degrees.
  • Line a baking sheet with aluminum (optional) and place marinated chicken skin up on a baking sheet.
  • Roast until a meat thermometer reads 160 degrees F, about 45 minutes. Remove from oven and let chicken rest before carving.
