Greek Lemon Chicken

Simple food is always the most comforting. So when looking for a delicious dish to kick off the Spring this Sheet Pan Greek Lemon Chicken recipe was my go to.While rummaging through the cabinets I found some Greek oregano we dried out the prior year. Oregano adds so much flavor to this dish there’s really not much you have to do. The other reason this dish is so simple is because you don’t have to stand over the stove. Life is so hectic these days it’s nice to have a dish you can season, pop in the oven and walk away from. It leaves you time to do other things. Like chase kids.

This weather provides the perfect opportunity to turn on the oven. It’s not so warm that such an act would result in you getting the evil eye. And best of all it’s a super comforting and healthy meal. Yes, I said it healthy. Yummy, yum, yum. This is a great Paleo or Whole 30 dish minus the potatoes. Swap the potatoes out for brussel sprouts or a nice Greek salad.

By the way, it’s also delicious off the grill. You can’t go wrong with this dish.

Sheet Pan Greek Lemon Chicken

Makes 4 servings


  • 2 pounds chicken thighs
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1/2 cup of olive oil
  • 4 cloves of garlic, minced
  • 1/2 cup of fresh lemon juice, divided
  • 1 tablespoon dried oregano
  • 1 teaspoon dried rosemary
  • 3 large potatoes, sliced or quartered
  • 1 large red onion, sliced
  • additional salt and pepper to taste
  • 2 lemons, quartered
  • chopped fresh oregano for garnish (optional)


Preheat oven to 400 degrees Fahrenheit

In a large bowl season chicken with salt, pepper and 1/4 cup olive oil.

In a separate bowl combine garlic, lemon juice, oregano and rosemary.

Pour lemon mixture over chicken and allow to marinate for 30 minutes.

Drizzle olive oil on baking sheet and scatter potatoes and onions. Sprinkle with salt and pepper.

Place chicken skin side up, on top of onions and place lemons in between chicken.

Pour remaining lemon mixture over chicken and potatoes.

Bake for about 45 minutes to an hour or until the internal temperature reaches 165.

We served our chicken with orzo and tomato feta salad. It was absolutely delicious. What would you serve with your Greek Lemon Chicken.
