Blintzes are a decadent sweet European dessert filled with a delicious sweet cheese mixture or fruit. It’s extremely rich and delicious and even though it’s decadent it isn’t hard to make. This cheese blintz with raspberry sauce is the perfect Easter dessert. Actually, it’s the perfect anytime dessert.
If you follow the blog you know that I am an advocate of using what I already have in the house. The other day I was looking for something sweet and I realized I had some frozen apricots left over from our Moroccan family dinner. Couscous can be served as either a savory or sweet dish. I’ve already made a savory dish so I decided it was time to try sweet. Presenting, my apricot raisin couscous cake.
Valentine’s day is coming and we’re making white chocolate cranberry hearts. Yay, chocolate. We try to teach our littles that gifts should come from the heart. It should show people you are thinking about them. So, for valentine’s day (and other holidays) we make our gifts with our hands and from our hearts.
Sweet caramel, deliciousness. That’s what I think of when I think of flan. I have no idea when I 1st had flan but what I do know is that I like it so much I’ll eat anyone’s flan. Yes, even the over processed version of this custard that comes in plastic cup. I’ll admit it, it’s one of my weaknesses. The nerd in me wondered, how is this a Latin American dish? Custard makes me think of Europe. And what do you know? Flan is from Europe. Originally Rome, then eventually it made its way to Spain (with some alterations). The European version is more savory dish where as the Latin American version is sweet and filled with local flavors like coffee. It’s sumer and I’ve had my eye on a delicious pastry, a palmier. It’s a French pastry that can be adapted to either sweet or savory flavors. Not the typical sweet comfort I look for, but in the summer you don’t always want something super sweet. It was probably best since I decided to make them with my little and he really doesn’t need anything really sweet ever (energy for days). Although theses will be a little sweet, some of the sweetness with be cut by the lemon I’ll add. Lemon palmiers here we come.
