St. Patrick’s Day is Friday and I wanted to make something different to celebrate the holiday. I always make corned beef and cabbage so that was out. Then I remembered the Irish Pub hubby and I went to while we were in Maine. We ended up in a conversation with another couple and I remember the husband saying that he was happy with a dish as long as the potatoes were good. That’s right the cornerstone of any good Irish dish is the potato. And you can’t get more pure than a potato galette. It’s straight up potatoes and butter. Which means it’s so delicious.
There is nothing more gratifying than some crunchy, well seasoned french fries. Of course, after making several healthy dishes for family and friends, I’ve been a little more thoughtful about making my favorite food more healthful. It was also important to use that bag of 5 pound potatoes I bought last week. So I present to you baked rosemary french fries.
Memorial Day just wouldn’t be the same without Mama’s Potato Salad. There are some holidays that you just expect certain dishes. Sometimes, it just doesn’t feel like it’s the holidays with out it.
I love remaking leftovers. This dish in particular reminds me of mornings when I lived in New York City. I was privileged enough to live right next to a wonderful sidewalk cafe on the lower east side. This of course was before sidewalk cafes were a dime a dozen. The owner was a older Jewish man that introduced me to my love of Jewish cuisine. From bagels with lox to baklava it was like he had the best food I couldn’t get anywhere else.
