General Tso’s Tofu

General Tso’s is a mouth watering dish with a kick of heat. After several conversations I’ve decided to add more┬ámeatless (or at least those that have fish) dishes. It’s important to me that everyone who follows the blog is happy and feels included. Though, I used to incorporate vegetarian dishes via Meatless Mondays I seem to have moved away from it. But I promise this dish will make up for it. The sauce in this General Tso’s Tofu has layers of flavor. All I can say is that it┬átastes like another bowl (and another and another).

Fried tofu w/sesame-ginger sauce

September is back to school time and many of us are happy to send little faces to school to become better versions of themselves. So, we try to send them to school with everything they need and a little piece of home. Something that makes them smile when they open their backpack or lunchbag. But how do you fit that type of comfort in such a small bag with all of the restrictions the school has. The no gluten, no nut etc etc has been the bane of my school lunch existence. What to do? What to do? Make something that will withstand all the pressure. Fried tofu is perfect.
