Fall is coming. Well with the weather lately it feels like it is here. So I’m embracing local produce and warm comfort food recipes. Like this veggie filled potato soup recipe.

There’s something about Fall that makes me want a big bowl of soup. Though a hearty soup like this is good anytime. Especially, for holiday parties.

You can make most of this recipe in one large pot. Which also makes it a great recipe when you have family and friends over. Woo Hoo less dishes!

Ingredients
  

  • 4 large russet potatoes scrubbed & diced
  • 1 cup carrots (3 medium) diced
  • 1 small onion diced
  • 1/2 cup celery (2 stalks) diced
  • 2 cloves garlic minced
  • 2 cups chicken stock
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups milk
  • 4 tablespoons butter
  • 3 tablespoons flour
  • 1 cup mild shredded cheddar cheese optional
  • 6 slices cooked crumbled bacon optional
  • sour cream optional

Instructions
 

  • Place a large stock pot over medium high heat. Add combine diced carrots, onion, celery and garlic. Cook until carrots start to become soft and onions are translucent. Remove from heat and place vegetables to the side.
  • In a separate pot, over medium high heat add chicken (or vegetable) broth and diced potatoes. Salt and pepper to taste. Cover pot and bring to a boil (about 10 minutes). Once boiling, reduce heat to low and cook for an additional 15  – 20 minutes. Or until potatoes are soft enough to pierce with a fork.
  • Take 1/2 a cup of broth from the pot with the potatoes and add it a food processor along with the vegetable mixture. Puree until smooth. Add vegetable puree to pot with potatoes and broth.
  • Place a saucepan over medium heat, melt butter then add flour. Whisk butter and flour together. Slowly begin to add milk to mixture. Continue to whisk until mixture begins to thicken.
  • Add the thickened milk mixture to the potato and vegetable mixture. Stir gently. Some of the potatoes will start to break down.
  • You can add some cheese to thicken the soup even further.
  • Top with bacon, sour cream and cheese.
