One of the first seriously delicious recipes I feel in love with was Chungah’s One Pan Mexican Quinoa. Her blog Damn Delicious has tons of healthy and delicious recipes. And this Mexican Quinoa Skillet is no except. Though instead of adding canned green chiles I add fresh chopped jalapeños.

Pressure Cooker Rosemary Garlic Lemon Chicken

I’m in love with this pressure cooker rosemary garlic lemon chicken. I couldn’t believe it was so quick and easy to make a whole chicken. Something else that made me so excited about this recipe was that it was so easy to makeover. It’s flavorful but delicate enough that you can whip it up into something else.

We make these resolutions to eat healthy at the end of the year then end up being lead astray by our stomachs. This Kale and Sausage Soup doesn’t do that. Load it up with additional vegetables if you want. It’s so delicious, you’ll think you are Popeye. If you don’t have a pressure cooker just simmer for 30 minutes stove top and enjoy.

This Thai Curry Soup from Lexi’s Clean Kitchen is Delicious and healthy with tons of vegetables. You can swap out the shrimp in this recipe for chicken. Either way it’s absolutely delicious.

My family was so in love with these Turkey Pumpkin Chili I has to make a double serving then make it again the next week. The pumpkin really amps up the nutritional value of the chili. We made this recipe in the pressure cooker but making it stove stop doesn’t take anyway from the flavor.

Vegetarian Korma

This vegetarian korma recipe come from Kristen over at the endless meal. Absolutely delicious. Great for you Meatless Monday meal. To make this recipe vegan just remove the yogurt. The use of potatoes and cauliflower really gives the recipe depth and makes it really filling.

We have a friend that does BeachBody and they swear by this crust so we had to try it. This cauliflower crust pizza recipe is from Delish. I initially thought they were crazy when they talked about cauliflower crust but it was actually pretty good. Make sure to keep it healthy and make a vegetarian pizza.

Squash & Chickpea Tacos

Butternut Squash and Chickpea Tacos

I like my tacos with a bit of bit and these Butternut Squash and Chickpeas Tacos deliver on that. Especially, if you add a bit of jalapeño to that cilantro lime crema. The butternut is soft and the chickpeas are crispy with acid from the cilantro lime crema it is heavenly.

I also like to make these with small peppers for parties. I love anything that’s tasty and don’t have to think about. If you’re like me you are always running around doing 15 things at one time. Broiled Salmon

This is hubby’s masterpiece. Simple, quick and delicious. I love this Broiled Salmon along with some balsamic green beans (and rice). This is definitely a no brainer when you want a healthy and delicious meal.
