Came across this dish a couple of weeks ago during my fit for fish (and shellfish). Love shrimp because it absorbs a ton of flavor and it’s done in a flash. 5 Minutes in the pressure in all you need to get this dish done. Pressure Cooker Butternut Squash Soup
Not only is this butternut squash recipe healthy and delicious it’s also vegan. Saute onions then add peeled and cubed squash and all other ingredients to the pressure cooker and set 12 minutes. Then throw everything in the blender. Yum. I love the texture of this recipe and it’s just as good warm as it is chilled. Add it to you “Beat the Heat” menu or as shooter for fun at your next BBW.

Now I could have used the potatoes but the garlicy linguiça sausage was much harder to come by so I used the sausage I had on hand and increased the garlic. If you are lucky enough to get your hands on some Portuguese linguica sausage do it. You won’t regret it.

Or my cousin’s more light and summery potato salad which uses olive oil instead of mayo. Either way, the pressure cooker is a great way to shorten the cook time on your potato salad. Yup, I did it. I put my ribs in the pressure cooker. I wasn’t sure whether my husband would every forgive me. Key Lime Pie is one of my favorites. Unfortunately, not everyone can make it well. I know when i was in Florida the baker owner explained that many Northern bakers don’t use real key limes (Hmmm).
