September 15 was the beginning of Hispanic Heritage month. In celebration of Hispanic Heritage month I wanted to share some of my favorite dishes. This Corn and Poblano Empanadas recipe was well received even though this is a house full of carnivores. Continue reading “Corn and Poblano Empanadas”
I love a soul warming chicken and rice dish (probably because I’m a carbaholic). And from a very young age, I loved Arroz con Pollo. Anytime I make it, it reminds me of my childhood. It’s like nothing but happiness on a plate. A nice moist chicken can be difficult but this Instant Pot Arroz con Pollo (Chicken with Rice) is not.

He said for it so often, I found different ways to make it so I could be excited about it. And that’s how the PB&J Sushi Roll Recipe was born. Continue reading “PB&J Sushi Roll Recipe”
So, I am absolutely in love with breakfast burritos. Sometimes, if I have to think about breakfast it just doesn’t happen. So having a breakfast that’s easy to make takes the stress out of the morning (well at least that part of the morning). Best part… this recipe can be made ahead of time and thrown in the freezer. These breakfast burritos are so delicious, it actually makes me want to eat breakfast. Even on my groggiest days. Continue reading “Breakfast Burritos”
So…. I have a confession. I have a freezer full of carrots. I’ve been trying every carrot dish I’ve come across. But making breakfast as easy as possible has been my main focus since we’ve kicked off back to school. I love these Carrot Cake Overnight Oats. Not just because it’s another way to get rid of the carrots in the freezer but because it’s healthy. Who can say no to carrot cake for breakfast, right? Continue reading “Carrot Cake Overnight Oats”
The first year I went to the New York City Food and Wine Festival I was enamored. We spent a lot of time talking to the chef from the Korean Food Foundation. I thought it was wonderful that they were encouraging people to cook more Korean food and to visit Korea to learn more about Korean culture and food. The recipe I got from the chef there is the base of this Bo Ssam Korean Pork Belly. Continue reading “Bo Ssam Korean Pork Belly”
