I ask my littles do you want “chicken blah blah blah?” (Yes “blah, blah, blah” because it doesn’t matter what I said because I said chicken first). And they say “No! I have to be honest, we do eat a lot of chicken in our house. Of course, that’s because there are 6 of us and we eat at home. I mean we even bring lunch from home. When you are feeding a family of 6 on a single salary you have to be thoughtful of the grocery bill. Cooking with chicken, particularly chicken thighs is an easy way to be a bit more cost conscious. So, I have to figure out ways to make that chicken anew. They way I get around the call for “No Chicken” is to make it differently. Let’s be honest whether it’s chicken or burgers or sometimes you just want something different. Something to tingle those taste buds. You know.

If we are going to eat chicken everyday (or every other day) I make sure change up the flavor profile and the consistency of the dish as well as what I serve it with. Absolutely love chicken tikka masala. It’s a game changer. And I realized that when friends and family who said they didn’t like Indian food loved this dish. It’s chicken in a creamy tomato sauce. Who doesn’t love that? Not anyone here. Of course, there are also all of these wonderful layers of flavor from the spices that go into this recipe. Thinking and writing about it makes me want to whip up a batch right now.
The littles are addicted to crunchy chicken. So this recipe inspired by the parmesan crusted chicken from BJ’s Resturant Brewhouse in New York was a hit. The parmesan in the recipe really helps to provide flavor and crisp to the crust. We serve these parmesan crusted chicken fingers to with some sweet potato fries. The salty and sweet combination is one even the littles can’t resist. It’s oh so tasty.
Pan Roasted Lemon Chicken
Chungah at Damn Delicious has a Pan Roasted Lemon Chicken that is to die for. Though there’s a delicious lemon and garlic roasted chicken recipe right here on the blog. That recipe uses a whole chicken while Chungah’s uses thighs. Which makes it great for a weeknight meal because it only takes about 25 minutes. If you saw the recipe from early this week you know there was a love fest in my house over the Greek Chicken Avgolemono. It made me realize … we really love the chicken lemon combination in this house. Which includes this pan roasted lemon chicken recipe.
Another chicken dish we love is Chicken Pad Thai. This is really a “Winner, Winner, Chicken Dinner” because the littles love pasta. The final recipe in this list of deliciousness is Buffalo Chicken Wings. Big debate in my house as to what the 5th chicken recipe should be fried chicken or chicken wings. Since a fried chicken recipe was already included went with a classic chicken wing recipe. We love this buffalo chicken wing recipe though it is a bit spicy. I serve these with some loaded cheddar potato skins and make it family game night.
