Oh my sweetness. Valentine’s day is here and there is nothing better than a delicious sweet treat to indulge in. And this Almond Flour Brownie with Peanut Butter Swirl is a fudgy, gluten free treat the whole family will love.

While looking for ideas for healthy sweet for Valentine’s Day I came across a fudgy brownie recipe, on Carolyn’s blog “All Day I Dream About Food.” Carolyn’s recipe is a Keto brownie recipe but what I love the most about it is that it’s fudgy.

I love finding new ways to use ingredients. And in the past almond flour has been one that was tough for me to master. When I’ve used almond flour to bake the recipe always seemed a bit dry add in need of more flavor.

To get the taste and texture I wanted I’d have to add, coconut flour or rice flour and way to many other ingredients. I mean … who has time for that.

I love me a moist, delicious gluten free dessert but sometimes it just takes too much effort. That is until now.

As usual, I adjusted the recipe to fit what I already had in the house. And since sweets are typically for the littles, I didn’t feel the need to stick to all of Carolyn’s Keto ingredients.

What’s Difference?

So … what’s the difference in the recipes? Well, my recipe uses plain gelatin not grassfed gelatin (to be honest I didn’t even know that was a thing). This recipe also doesn’t use Swerve Sweetner. And instead of sugar-free chocolate chips I used Hersey semi-sweet chocolate chips.

Recipe Note: If you chose to use Swerve to keep the recipe more keto-friendly it is still 2/3 cup.

Also, if you don’t have almond flour on hand you can substitute it with all-purpose flour but you should decrease the number of eggs to 2.

Almond Flour Brownie with Peanut Butter Swirl

This is a delicious fudgy almond flour brownie with a peanut butter swirl the family will love. It’s so good you’ll be happy you went gluten free.

Ingredients

  • 1/2 cup melted butter
  • 2/3 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup almond flour
  • 1/3 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 1/4 cup semi-sweet chocolate chips

Peanut Butter Swirl

  • 4 tablespoons natural peanut butter
  • 2 tablespoons butter

Instructions

  • Preheat oven to 350 degrees F.
  • In large bowl combine butter, sweetener, eggs and vanilla.
  • In a separate bowl combine almond flour, cocoa powder, gelatin, baking powder and salt. Mix dry ingredients completely.
  • Add dry ingredients to butter mixture. And whisk until completely combined.
  • Stir in water and then chocolate chips.
  • Grease a 9 x 9 baking pan and spread brownie batter into the pan evenly.

  • In a separate bowl combine peanut butter, butter and sweetener. Mix until completely combine.
  • Using a spoon take a spoonful of the peanut butter mixture and drop it into the brownie batter.
  • Using the tip of a knife make a swirl shape to move the peanut butter mixture through the brownie batter.
  • Bake for 15 to 20 minutes or until the edges are set.
  • Remove pan from oven and allow to cool for 5 to 10 minutes.
  • Cut into squares and serve with your favorite brownie topping.
