This simple, soft and chewy Apple Pie Coconut Granola Bars are absolutely delicious. The simplicity of the recipe means you can swap in fruits and nuts or whatever you and your family like.
So, I’m going to be completely honest, this is not like some of the other dishes I put on here. Where it’s a favorite I’ve been making since high school or one that I conjured in my head and used my friends as genuine pigs. Or even one that was so perfect on the first try I had to share. The first time I tried to make granola bars last summer it was an epic fail.
And when I say epic fail, I mean fall apart in your hands type of epic fail. Of course, I didn’t let that stop me. I’ve been working my way around a few oatmeal and quinoa balls here and there and I’ve found my magic sauce. Butter and honey. You never have to worry about anything falling apart with butter and honey.
I had a can of apple pie filling in the pantry (yup, it’s time to clean out the pantry) and so I decided to take the leap. I guess you can’t really call it a leap, I’ve made something similar but would this version stay together? Yes, yes it did. And it tasted darn good. This is the best darn clean out the pantry dish yet. So I’m sharing the recipe with you. My family loved these Apple Pie Coconut Granola Bars and it proved to be a great after school snack. Hope your family loves it as much as mine did.
Apple Pie Coconut Granola Bars
Makes about 12 bars
- 2 ounces butter
- 2 1/4 cup quick oats
- one ( 15 ounce can) apple pie filling
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/3 cup brown sugar
- 1 cup shredded coconut flakes
- 2 tablespoons honey
Tools: large bowl, parchment paper, baking sheet
Preheat oven 350 degrees F.
Melt butter in microwave.
In a large bowl, mix butter and oats.
Then add apple pie filling, spices, sugar, coconut flakes and honey. Mix until all of the ingredients are combined well.
Place parchment paper in baking sheet leaving at least half an inch of paper hanging over.
Dump granola mixture into baking pan and press flat. Make sure your granola is packed tightly.
Bake for 25 to 30 minutes.
Allow to cool completely.
You can use the parchment paper to remove the granola from the pan.
Cut into bars or squares and enjoy with the family.
Make sure you hide a couple for yourself so that you can get some. I can’t believe how fast these went.
