As the Summer draws closer you might be looking for some delicious comfort food that’s just a bit lightly. You know, on those days it’s so hot you barely want to to eat? This Baked Lemon Basil Salmon Recipe is perfect for those types of days, it’s delicious, easy to make and light. And I’ll be honest though I love me some Lox, It wasn’t until I got older that I started to really like salmon.
And this Baked Lemon Basil Salmon Recipe is one I’m in love with. Anything that is quick and easy to make and absolutely delicious is for me. It doesn’t need a lot of anything to taste good. And you know it’s good because despite the heat I turn the oven on anyway.
We’ve been looking to incorporate more salmon into our weekly meals. As the Summer draws closer and closer the price of salmon gets better and better. Not only is it great protein, Omega 3 fatty acids. I was especially feening for some protein after the 10K I ran the other day. This salmon recipe provided all of that and more. I’m not trying to be a walking billboard for salmon but … it’s great protein (25 grams) nutrient dense and has fat. After that 10k I need all that and so much more.
You can make it a complete meal by adding some thinly sliced zucchini or shaved Brussels sprout or another vegetable that will cook quickly. And if you really don’t want to turn the oven on, tale this Baked Lemon Basil Salmon recipe and throw it on the grill.
Baked Lemon Basil Salmon Recipe
Makes 6 Servings
- 1 1/2 pounds salmon
- 1 teaspoon salt (I actually used pink Himalayan salt)
- 1/2 teaspoon pepper
- 2 tablespoon fresh basil, chopped
- 4 tablespoons lemon juice
- 2 tablespoons butter
Tools: aluminum foil, baking sheet
Preheat oven to 400 degrees.
Lightly aluminum foil (or parchment paper) with nonstick spray.
Place salom on foil salt and pepper.
Sprinkle with basil and gently pour over lemon juice.
Place thinly sliced pats of butter on top of salmon. If not using butter, lay slices if lemon over salmon.
Place into oven and cook until the fish flakes easily with a fork, about 15-18 minutes.
Serve with rice and veggies or a pasta salad and additional lemon wedges if desired.
