So, when I came across Chrissy Teigen’s recipe for a cheesy brie dutch baby in her cookbook Craving, Hungry for More I was super excited to add brie to the recipe I already had.

And guess what? So delicious !! I loved all the layers of flavors especially with the addition of the brie. I’ve made a dutch baby with apples, walnuts and whipped cream before. But adding the brie really took the recipe up a notch. It all goes so well together.

OMG just writing this makes me salivate. If you have a little extra time I would suggest you thin out cranberry or raspberry jam (warm and add a bit of grape juice until it’s to the consistency you like) and use that as your syrup. Yummy yum, yum.

I’m not going to lie, once I”m finished with this post I’m probably going to make some dutch babies for the family. They love it and it warms my heart to see them enjoy eating my food.

Ingredients

  • 2 tablespoons unsalted butter
  • 2 large eggs lightly beaten
  • 1/2 cup flour
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon

Filling

  • 2 tablespoons butter
  • 1 large apple sliced in eights
  • 1/2 cup walnuts
  • 1 tablespoon sugar

    Instructions

    • Preheat oven to 425 degrees F. Cast iron skillet.
    • In a bowl whisk together flour, cinnamon, sugar and salt.
    • In a separate bowl whisk eggs lightly, then add milk and vanilla.
    • Slowly add fry ingredients to wet ingredients whisking continuously to incorporate. Then mix in small chunks of brie cheese.
    • Either stove top or in your oven, melt butter in a 10 inch cast iron pan. Brush the side of the pan with butter. 
    • In a separate pan over medium high heat, melt butter with a tablespoon of sugar then add walnuts. Caramelize walnuts for about 30 seconds on medium heat and add apple slices.
    • Mix apples and nuts so everything is coated with brown sugar and butter mixture. Then turn off the heat.
    • Pour batter into skillet, then carefully toss apple and nut mixture on top. Place skillet into the preheated oven. Bake for 20 minutes until pancake is cooked through and brown on top.
    • Once finished add powdered sugar or syrup and serve immediately.
