Broccoli Cheddar Quinoa Cups

Delicious healthy Broccoli Cheddar Quinoa Cups are a great snack for your littles (or bigs). It’s filled with protein and fiber. Who would have thought the idea for this healthy and delicious dish would have come from a child.

People rarely believe me when I tell them the things my oldest asks me to make for him. Like these quinoa cups or strawberry soufflé. And of course, hubby thinks it’s ridiculous that I oblige him. But what’s a mom to do? Not to mention … I have to keep my favorite taste tester happy.

Broccoli Cheddar Quinoa Cups

Can’t really call myself a “Mommy Food Blogger” if I don’t make sure the kids like it. But to be honest, when my little asked for this I was a bit surprised. I’m not sure where he heard it but it must have sounded good and he asked me for it. He was probably enticed by the broccoli and cheese part. Either way, it’s a pretty delicious and healthy dish that everyone loved.

We had this with some roasted chicken and it was perfect. Of course, if you wanted to keep it vegetarian that works too. Quinoa is considered to be one of the best complete proteins. It doesn’t give you as much protein as meat but it’s pretty good for a plant. And now that I think about it…. This would make great party food too. Especially, if you have a couple of vegetarians in your life.

Broccoli Cheddar Quinoa Cups

Makes 15 cups

Ingredients

  • 1 1/2 cups vegetable broth
  • 1 cup quinoa
  • 2 cups broccoli, chopped
  • 1 cup onion, finely diced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup gruyere cheese, shredded
  • 2 egg, lightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Tools: medium pot, large mixing bowl, mixing spoon, cupcake tin, plastic spatula

Directions

Preheat oven to 350 degrees F.

Bring broth to a boil in pot.

Add quinoa and cook according to directions.

Once cooked, place quinoa in a bowl and allow to cool.

In a large mixing bowl add cooled quinoa, broccoli, onion, cheese and eggs.

Mix until thoroughly combined.

Spray cupcake tin with cooking spray.

Scoop 1/3 cup of quinoa mixture into cups.

Bake for 20 to 35 minutes or until the edges turn slightly brown.

Remove from oven and allow quinoa cups to cool.

Use plastic spatula to gently separate/loosen edges of quinoa cup. Then gently use spatula to remove cooled quinoa cups from tin.

*Note: If you remove quinoa cup from tin too soon it’ll fall apart.
