While the littles are diving into ham and mac n cheese, I’ve been trying to make sure we eat a but healthier than the kids. We are looking to get their weight up but in the process ours has gone up too. All about comfort food and these Cajun Blackened Cod Taco recipe was perfect. The cajun seasoning added layers and layers of flavor. Cooking the cod on the griddle made cooking easy and quick so it wasn’t a big deal that I was making two dinners.
We love New Orleans Style Cajun cuisine. And it’s great if you’re not afraid of spice. One of the most essential seasonings in a Cajun mix is cayenne pepper. Which is why this dish was for the adults only. Of course, you can totally leave out the cayenne pepper if you do not like spice. But I was making this dish just for hubby and I, so I turned up the spice.
If you’ve been wondering what it blackened means? Or how to blacken fish? Blackening is just a cooking method. And what’s great about it, is that it’s pretty easy to achieve. And just in case you are still worried here are some additional tips.
1st Pat your fish dry and remove as much water as possible.
2nd Dip your food (in this case fish) in to butter.
3rd Dredged the fish in your Cajun spices.
4th Cook in a very hot pan.
5th Do Not move the fish. Moving it will cause it to fall apart.
The fish will have a dark brown crust. It might look like it’s burnt … but it’s not.
Cajun Blackened Cod Taco with (And Tips on How to Blacken Fish)
Makes 4 servings
- 4 cod fillets (6 ounces each)
- 2 tablespoon olive oil (reserve 1 tablespoon)
- 1 tablespoon paprika, sweet or smoked (I used smoked)
- ½ teaspoon salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon cayenne, or to taste
- 1 teaspoon black pepper
- 1 teaspoon ground cumin
- ½ teaspoon oregano
- 1 teaspoon ground thyme
- 6 corn tortillas
- chopped fresh parsley for garnish, optional
- sliced avocado, for serving
- sliced lemon, for serving
Tools: small bowl, dredge pan, griddle or cast iron pan
In a small bowl combine spices.
Wash cod and pat dry with paper towels.
Drizzle cod with olive oil.
Dredge cod in spice combination.
Add reserved olive oil to griddle (or cast iron pan) over medium high heat.
Place cod in hot pan and cook on each side 2 minutes. Do not move fish once placed in the pan (Yes, I know it’s smoking).
Serve this Cajun Blackened Cod in a corn taco shell with some avocado and a squeeze of lemon. Bam!!
