So…. I have a confession. I have a freezer full of carrots. I’ve been trying every carrot dish I’ve come across. But making breakfast as easy as possible has been my main focus since we’ve kicked off back to school. I love these Carrot Cake Overnight Oats. Not just because it’s another way to get rid of the carrots in the freezer but because it’s healthy. Who can say no to carrot cake for breakfast, right?
I can happily say that my obsession with carrot dishes is waning. Have you every had that happen to you? You have a ton of one thing in your house because you love it. But the more you eat it the less you are interested in eating it.
Carrots we one of the first vegetables we introduced to our littles (along with sweet potatoes). So we bought a huge bag of carrots when the babies started eating solid food. Of course, after a month or so of almost continuous roasted carrot dishes, it seemed like their feet were becoming a bit orange. And then I knew it was time to take a carrot break.
Well, the break is over and it’s time to get back to work. The coconut carrot bites did well. And the Banana Carrot Bread recipe was a hit too. So I figured I’d add another healthy carrot breakfast recipe to the mix. So woo hoo… we’ve made it to the Carrot Cake Overnight Oats. It’s not just for kids anymore.
I love it because it’s delicious (carrot cake is one of my favorite cakes) and healthy. If you’re luke warm to raw carrots or really want to bump up the flavor, mix your maple syrup with a little orange juice and pour it over the grated carrots. Yeah, that sounds good right. See I told you, these carrot breakfast dishes are delicious.
Carrot Cake Overnight Oats
Makes 1 serving
- 1 cup rolled oats
- 1/2 cup greek yogurt (I prefer coconut)
- 1/4 cup carrot, shredded
- 1/4 teaspoon ground cinnamon
- 1 teaspoon of vanilla
- 1/2 – 3/4 cup milk (coconut milk)
- drizzle of maple syrup or sprinkle brown sugar
Optional Toppings: walnuts, raisins, coconut flakes, whipped cream
Tools: Wide Mouth Mason Jar, grater
Add oats to your jar.
Add yogurt, then a layer of grated carrot.
Next add cinnamon and vanilla
Pour milk over layers.
Add a generous drizzle of maple syrup.
Place in the refrigerator overnight.
Enjoy your carrot cake overnight oats in the morning.
