And meatballs are the perfect go to. Whether it’s Tuesday night or Friday, no one can turn down a delicious meatball. If I planned well, there might already be a bag of cooked meatballs in the freezer.
If you love (I mean like, I mean need) to meal plan, then you need to add the El’s Kitchen Comforts meatball recipe to your list. Double to recipe and freeze the extra. It’ll make getting everyone fed during the week much easier. Sounds good right?
Why a sub? Because I wasn’t interested in putting these meatballs over pasta. Luckily it’s hearty enough to hold it’s own. We have a house of serious eaters and they need to feel full. And of course, the kids love it because it’s a great hand held meal. Yup, any excuse to eat with their hands.
Typically, I keep it simple and make my meatballs nice and small so it fits in a hot dog bun. Oh yeah!! You like that right. If you’re making this for a party. Smaller meatballs might be your best bet. Not just because there’s more for the crowd but because there’s less possibility for a mess. Making it smaller keeps it hand held.
On the other hand, if you are looking for a completely satisfying dinner put this baby on a hoagie roll, toast it up and enjoy. You can even serve it with a side of potato wedges and a salad. Of course, a salad. LOL
Cheesy Meatball Sub Recipe
Makes 4 servings
- 12 – 16 meatballs cooked meatballs (El’s Kitchen Comforts Meatballs)
- 14 ounces pasta sauce
- 2 cloves garlic, minced
- 4 to 8 slices provolone cheese or mozzarella cheese
- 4 hoagie rolls
Tools: baking sheet, sauce pan, slotted spoon
Preheat oven to 350 degrees fahrenheit.
Cut top of roll into a V shape.
Drizzle with a little olive oil and sprinkle with a little salt and garlic powder.
While oven is heating, warm pasta sauce in a sauce pan over medium heat.
Add garlic to pasta sauce.
Using a slotted spoon, add meatballs to pasta sauce. Allow meatballs to simmer in sauce for several minutes.
Spoon 3 to 4 meatballs onto each hoagie roll and cover with cheese.
Place meatball sub back on baking sheet and return to oven.
Bake for 3 to 4 minutes or until cheese is melted.
Cool slightly and serve.
Perfect addition to a recent menu I put together for a graduation party. You might want to serve this along with some potato wedges. It’s great party food. And what’s better than family, friends and great food
