Those of you that have been following me know that our pediatrician suggested we give the babies peanut butter three times a week. You also know that I’ve been determined to make the delivery of said peanut butter as mess free as possible. So on today’s peanut butter adventures, I give you Chewy Peanut Butter Cookies.
I know you are looking at me sideways. This is divergent from the somewhat healthy chocolate chip peanut butter bites but I had to. The littles were so done with those bites I had to come up with something they just couldn’t resist. Yup, cookies.
I used to love peanut butter cookies when I was in high school. My best friends and I would meet at the corner store in the morning and get snacks for lunch. One thing I purchased was “Grandma’s Peanut Butter Cookies.” They were perfect and always chewy.
I have an obsession with chewy cookies. If it isn’t chewy it just isn’t right. I’ve found lots of ways to bake chewy cookies. From slightly under baking, to adding cornstarch, all of these tricks work. Of course, I love this recipe because no tricks are needed. It just comes out perfect every time. The best part is that you probably have everything you need to make this cookies in your house already. Talk about easy.
Chewy Peanut Butter Cookies
Makes 40 -42 cookies
- 1 cup butter, softened
- 1 cup chunky peanut butter
- 1/2 cup brown sugar
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 1/2 cup flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- baking spray
Tools: 2 large bowls, hand mixer, cookie sheet, cookie scooper or tablespoon
Preheat oven to 375 degrees.
In a large bowl cream butter and sugar until smooth.
Mix in peanut butter. Then add eggs and vanilla.
In a separate bowl mix dry brown sugar, white, sugar, flour, salt, and baking powder.
Add flour mixture to butter mixture until thoroughly combined.
Using a cookie scooper or tablespoon scoop dough and shape into a ball.
Spray cookie sheet and place dough on baking sheet.
Press peanut butter dough balls lightly with a fork.
Place cookie sheet in oven and bake until lightly golden brown, about 10 minutes.
Remove cookies from baking sheet and allow to cool before placing in an airtight container.
