Cinnamon Sweet Potato Muffins

So my little asked me for muffins the other day and I’m a sucker for requests from my littles. I wanted to make a muffin that made use of what we had but was also velvety sweet potatoes. So I whipped up some Cinnamon Sweet Potato Muffins.These little Cinnamon Sweet Potato Muffins were little velvety bundles of joy. It wasn’t too sweet. There was just the right amount of sugar. Now, I understand why my little asked for muffins (my sweet potato pancakes are pretty good too). It’s great to start your day with a sweet treat. Oh and just a quick tip, sweet potatoes typically have a dark orange, reddish skin and the inside is orange. These tubers are more moist and sweet.

There are tons of other ingredients you can add to this recipe. Walnuts to increase the protein. Or even some apple chunks. This recipe provides a great muffin base. Ooooo, you could even add a streusel topping to this. One of the fun elements of making these muffins is adding whatever crazy element my family decides on that day. SMH.

You could even swap out the pureed sweet potatoes for pumpkin puree if that’s what you have in the house. It’s a nice little breakfast or snack muffin. My littles eat these anytime of day. Yum.

Cinnamon Sweet Potato Muffins

Makes 14 to 16 mini muffins

Ingredients
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon allspice
  • 1/2 cup melted butter
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 2 cups sweet potato puree
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 2 large eggs

Tools:  2 cupcake pans, 2 large bowls, spatula

Directions

Preheat oven 350 degrees Fahrenheit.

Grease cupcake pan with non-stick pan.

In a medium bowl, combine flour, baking soda and baking powder, salt and spices.

In another bowl, butter, sugar, sweet potato puree, milk and vanilla extract.

Then add eggs to wet mixture.

Pour wet mixture into dry ingredients.

Fold in with a spatula.

Combine completely.

Using a 1/4 measuring cup to scoop batter into cupcake tin.

Bake for 22 – 26 minutes or until inserted toothpick comes out clean.

Allow to cool before removing muffins from pan.
