If you haven’t noticed (I hope you have) I’m all over Summer dishes. Food that makes you feel good is so important. Then add dishes that are easy, filling and full of flavor and that’s even better. This Corn and Jalapeño salad is exactly that. With a little bit of spice.
There’s nothing like adding a little spice to a dish for a hot summer day. I always remember my friends telling me “… you want to sweat in the summer, it’ll cook you down.” I understood the … behind it, but at the time I didn’t quite buy into the idea. Of course, I am a someone that like spice so I figured I’d give it a whirl by adding a little spice to a nice summer salad.
Once the summer comes we have tons of corn. It’s easy to get (like walk down the road east) and it’s inexpensive. We have corn so many different ways I’m usually sick of it by the end of the Summer. Hubby will soak a bunch of corn in the husks and we will throw it on the grill. It’s good just like that or you can cut it off the cob and make all types of salads. If you don’t have fresh corn now worries, I’ve made this dish tons of time with frozen corn. Just cook it for a little bit before you put the dish together.
Dishes that are quick and delicious leave more time for everyone to enjoy themselves at the dinner table. To make sure everyone, including the little enjoy this dish make sure to remove the seeds from the jalapeño pepper and chop it really small. With all of the other flavors and the lime olive oil dressing most people don’t even realize there are fresh jalapeño peppers. Though I will say that the jalapeño peppers from our garden do seem hotter than the ones in the store.
Corn and Jalapeño Salad
Makes 4 servings
- 1 pound of yellow corn, cooked
- 1 red pepper, diced
- 1/4 cup of red onion, diced
- 1 jalapeño, chopped (deveined and seeded)
- 2 green onions, sliced
- 1/4 cup of cilantro
- juice of 1 lime
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
In a large bowl add corn, red pepper, jalapeños, red onion, green onion and cilantro and mix well.
In a separate bowl, mix lime juice, olive oil, salt and pepper.
Poor olive oil mixture over corn salad and gently toss to coat thoroughly.
Yup, that’s it. Easier than you thought huh?
This Corn and Jalapeño salad is a nice, light dish with just a hint of spice. You can have it with a nice steak or throw some grilled or roasted chicken over it to make it a complete meal.
