Yes, this Curry Roasted Cauliflower is so flavorful I want to eat it. Even when I don’t want to eat. What I mean? Well, while on this journey to run half marathons, I’ve learned that I do not eat enough. Shocking right. The food blogger doesn’t eat enough. I LOVE FOOD. But I love great food and if it’s not good or part of an experience I’m not interested.
It’s true. For me, food is about family, celebrations and fun. I want dishes that make my friends and family go “yum -o.” I want to sit and eat with them and have a good time. But sometimes as a mom of 4 that doesn’t happen.
I don’t have time to make four course meals that might end up on the floor or to marinate that chicken as long as I wanted. Sometimes, I don’t get to sit down to dinner with the family because I’m running back a forth to the kitchen. But this Curry Roasted Cauliflower recipe is sooo good I want to eat it (with and without the family).
Talk about a good way to get your veggies in. I do suggest that if you are making this as a snack that you make more than 1 head of cauliflower. And if snacks are your favorite way to eat your vegetables you might like this baked zucchini chip recipe or these sweet potato latkes.
Curry Roasted Cauliflower
Makes 4 Servings
Ingredients
- 1 head cauliflower
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1 tablespoon curry powder
Tools: large bowl, baking pan
Directions
Preheat oven 425 degrees F.
Rinse cauliflower and pat dry. Then gently remove outer leaves and cut the core off.
Flip cauliflower on it’s head and begin to cut along natural separations.
Cut into bite sized pieces.
In a large bowl, add olive oil, seasonings and mix well. Then toss in cauliflower and using clean hands (or a spoon) toss until completely covered.
Spread cauliflower on a rimmed baking sheet in a single layer and place in oven.
Bake for 15 minutes then flip and roast bake for another 10 minutes (the bottoms will begin to brown).
Remove from oven and serve warm.
