When my children have had a really long day they can be a bit picky about what they eat. So on day that they a really tired I try to make food they can’t resist like this Easy Parmesan Crusted Chicken Finger Recipe.

It’s funny because each adult in our family has their own special food for the kids. My mom and dad typically use pizza as their no brainer food to combat temporary pickiness. Hubby makes burgers and me I’m left floundering. But I’ve got something now that means no worries when it comes to getting the kids to eat. Home made tater tots and chicken fingers.
Don’t get me wrong. I’m pretty sure they call it chicken nuggets. But between you and I it’s chicken fingers. And as long as they eat it, they can call it whatever they want.
I’m a big fan of preventing waste. So when I realized I had some leftover breading from the baked zucchini tater tots I used it to make these parmesan crusted chicken fingers. Since I already had tater tots in the oven I chose to fry the chicken fingers to balance out the healthy and the tasty. LOL If you decide to bake these you can omit the egg batter portion of the recipe

Easy Parmesan Crusted Chicken Finger Recipe
Makes 6 Servings
- 1 1/2 pounds boneless chicken breast (or chicken tenders)
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
- 1 teaspoon onion powder
- 1 cup bread crumbs
- 1/2 cup flour
- salt and pepper
- 1/4 cup parmesan cheese, shredded
- 2 eggs, lightly beaten
- vegetable oil for frying
If using whole chicken breasts, pound chicken breast until thin. Then cut into 1 inch strips.
Season chicken with salt, pepper, onion and paprika place in a bowl and set aside.
In a separate bowl, combine flour, breadcrumbs, cheese and salt and pepper. Mix well.
Dip seasoned chicken into egg, then in to parmesan breading mixture. Make sure chicken is completely covered by breading.
Once covered, place on a parchment covered baking sheet or rack and continue to cover the rest of the chicken with the breading mixture.
Place heavy bottom or cast iron pan on the stove medium high heat. Add oil (about 2 inch high in the pan) and heat until 375 degrees F.
Once oil reaches 375 fry a couple of chicken fingers for 6 to 8 minutes or until golden on each side.
Do not over crowd your pan. Cook the chicken in batches until all are cooked.
Once golden remove and allow chicken to drain on a paper towel or rack.
Oh yeah, your a rock star. At least I felt like one that day. As the kids continued to ask for more and all of my worries of food being thrown across the dining room faded. I know it sounds a bit dramatic but my children are serious and 3 things, food, nap time and dance parties.You can make this Easy Parmesan Crusted Chicken Finger Recipe and serve it with zucchini tater tots or some mac n cheese cups.
