This Easy Pineapple Jalapeño Salsa is the perfect addition to you BBQ menu. It’s sweet, spicy and versatile. It can be served with chips or on top of fish.
It’s always nice to have a deliciously light dish on a hot Summer’s day. In anticipation of the Fourth of July I decided to whip up some super easy Pineapple Jalapeño Salsa. I love this recipe because the sweetness from the pineapple compliments the heat from the jalapeno pepper. It’s a really great combination of flavors. With the additional of cilantro, sweet bell peppers and lime this Pineapple Jalapeño Salsa is really tasty, light and refreshing.
The idea for this dish recipe came while I was working on a Caribbean themed family reunion. Has that ever happened to you? Like you’re in the store, looking for a gift for someone else and you think “Hey, I like that!” Yup, I came across this beautiful picture of a pineapple cut to be used as a bowl with pineapple salsa in it (you can see Tonia tutorial on how to create a pineapple bowl on her blog the Gunny Sack.
Visually, it was absolutely beautiful. Definitely, one of those eat with your eyes recipes, “taste the rainbow” type of pictures. You know the ones that look so beautiful you are drooling before you even taste it.
Of course, this recipe gets even better because it’s healthy, light and nutritious. On a hot Summer’s day it’s nice to have a dish that is balanced and light especially at a BBQ where there might be a lot of meat. Sweet and spicy which fit the theme of the event I was helping plan. It was a Caribbean themed reunion so there had to be a bit of spice. What better way to spice up a pineapple salsa than up with some jalapeño peppers. I’ve tried this recipe several ways, It is a recipe you need to make based on your crowd.
Here’s what I learned. If you use canned pineapple verses fresh pineapple the addition of jalapeño tones down the sweetness of the canned pineapple. It’s actually pretty well balanced if you don’t add too much of the pineapple juice from the can. On the other hand, if you choose to use fresh pineapple be gentle when adding the jalapeno. There is not as much juice or sugar and the jalapeño flavor and heat will be much more prominent. Of course, if your guest like spice, go ahead and bring on the heat.
It’s a great addition to your BBQ menu or weeknight get together for after the kids go to bed.
Easy Pineapple Jalapeno Salsa
Makes 12 servings
- 1 1/2 pounds fresh pineapple, diced or (1 1/2 cups canned pineapple chunks)
- 1 jalapeno pepper, seeded and diced
- 1/2 cup orange bell pepper, diced
- 1/4 cup cilantro, chopped
- 1/4 cup red onion, diced
- 2 tablespoon, fresh lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon cumin
Tools: Medium bowl
In a medium bowl combine pineapple, jalapeño pepper, bell pepper cilantro and red onion.
Mix in lime juice and season with salt and cumin.
Cover and place in fridge until ready to serve.
When ready, serve with tortilla chips.
It’s also a great topping for grilled fish or that juicy burger. Until I made it (and had leftovers to use up) I didn’t realize how versatile this salsa was. Hope you have a great time enjoying this easy pineapple salsa with your family.
