These Ham and Cheese Egg Cups are the perfect breakfast for when you are short on time.
This was the first week of Summer camp and it’s a bit more difficult to get 4 children, up, dressed and ready to leave around the same time in the morning. I’m so happy I made these Ham and Cheese Egg Cups so I could have breakfast already made for the littles in the morning.
I’m not going to lie to you with our oldest son my husband took care of drop off and pick up darn near every school day. I left so early for work that there was typically never an opportunity to bring him to school. And for the most part by the time I took him more often he was able to dress himself.
Drop off of four littles and the camps are in opposite directions. Ut Oh! Luckily, breakfast was one less thing I had to worry about. It was already made and easy to re-heat. That way I was able to have more time to get everyone ready. All about preparation which includes making sure there is breakfast already cooked. Add to that, if you drop it in a piece of bread it’s hand held. What?!?
Typically, I would add spinach to a recipe like this but that last time I did that it didn’t go well. So this time it is straight up ham egg and cheese. Whether you decide to whip your eggs or keep it whole it’s an easy and delicious hand held breakfast.
Ham and Cheese Egg cups
Makes 12 ham and egg cups
- 12 slices deli ham
- 1 c. shredded cheddar cheese
- 12 large eggs
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 teaspoon onion powder
- 1 tablespoon fresh parsley, for garnish
Preheat oven 400 degrees F.
Spray muffin pan with oil.
Gently press slices of ham into muffin pan then sprinkle with a little cheddar cheese.
In a bowl, crack eggs and season with salt, pepper and onion powder and whisk until completely combined.
Add 1/4 cup of beaten egg into ham cup.
Top with additional cheese if you choose.
Bake until eggs are cooked through, 12 to 15 minutes.
Garnish with parsley and serve with a bread.
