Honey roasted carrots tossed in brown butter, honey and coriander then sprinkled with sea salt. It’s a simple, easy and delicious side dish. The coriander compliments the honey and the salt really balances the flavor of the entire dish.
And who doesn’t love a side dish that’s this simple to make. It’s really just toss and roast. Then serve to the family.
I knew I wanted to share a roasted carrots recipe because it’s a dish that’s very family friendly. We used to puree carrots and sweet potatoes for the littles when we were first introducing them to solids. I found that they liked the carrots better (and ate more of them) when I roasted them. So, even though it’s much quicker to boil or steam carrots, roasting brings out the flavor of carrots a lot more.
And yes, you can make this recipe stovetop but if you have the additional time to roast it in the oven I suggest you do. Oh, and if you have fresh carrots (like really fresh, right off the truck local farmers market fresh) I’d also suggest you try this recipe with those. Fresh carrots will be even sweeter than what you’ll find in th grocery store. Best side dish ever!!
How Long Do You Bake Carrots
Personally, I think most vegetables are roasted/cooked too long. Veggies should still have a little bite to it. If you overcook your vegetables you lose all the nutrients in it. Roast whole carrots about 30 – 35 minutes. For this recipe, I used baby carrots and roasted about 20 minutes.

I baked these carrots in my beautiful cast iron skillet but you can make it in a ceramic baking dish or a baking sheet. Now when making these carrots for the littles I don’t top it with fresh cilantro but I do add a little sprinkle of pink Himalayan sea salt.

Honey Roasted Carrots
- 1 pound baby carrots or regular carrots cut into large chunks
- 4 tablespoon honey
- 2 tablespoon butter
- 1/2 teaspoon coriander
- himalayan sea salt
- Preheat oven to 400 degrees.
- Place butter in cast iron skillet over medium heat and allow butter to melt and slightly turn brown a little.
- Transfer butter to a medium sized bowl and whisk together butter, honey and coriander. Gently toss carrots in butter mixture.
- Place seasoned carrots in cast iron pan in a single layer and bake for 25 to 30 minutes until slightly tender.
- When finished sprinkle with sea salt and fresh cilantro for serving.
We served these honey roasted carrots with roasted pork and potatoes. But it’s the perfect side dish for any main course. Oooo especially, that Italian Pot Roastwith mashed potatoes. Delicious !!
