Yup, zucchini noodles a.k.a zoodles. For the next couple of weeks El’s Kitchen Comforts will be focusing on healthier twists to some of your favorite comfort food dishes. One of our favorite dishes is spaghetti with meatballs. So to make this dish a bit healthy (and add a ton of veggies) we make our own pasta sauce sauce and swap pasta for zoodles. So here are some tips on how to make tasty zucchini noodles.

And in the end, this carb lover made the ultimate sacrifice and substitute zucchini noddles for pasta. I know, I know. But you know what was crazier? I liked it.
Don’t look at me that way! If made right zucchini noodles actually taste pretty good. And this is coming from the ultimate lover of carbs. So that you get the most out of you zucchini noodles, I’m going to share several tips on how to make zucchini noodles that aren’t watery and will stand up to your sauce.
Small changes right? You figure, your still getting all the deliciousness from that homemade pasta sauce and delicious meatballs or meat sauce. So, I can give up a little something and switch out the pasta for some zucchini noodles.
So are you ready to swap out those carb filled noodles for some zucchini? Here are a couple of tips on how to make zucchini noddles that will stand up to your pasta sauce or any dish.
How to Make Tasty Zucchini Noodles (Zoodles)
Knife – On a flat surface cut your zucchini in half. Gently pierce the skin of the zucchini with your pairing knife slicing a small strip of zucchini. Continue to slice until your reached the core of the zucchini.
Peeler – Gently press the peeler onto the side of the zucchini. Apply pressure and slide the peeler down the zucchini. Slide the blade away from you.
Hand Held Spiralizer- Cut off the end of the zucchini so that is fits into the prong easily. Make sure the zucchini is centered and is pierced evenly. Apply pressure to the zucchini and turn it into the blade using the pronged top.
Table Top Spiralizer – Secure table top spiralizer. Cut off the end of the zucchini so that is fits into the holder easily. Make sure the zucchini is centered and is pierced evenly. Secure the zucchini between prongs and blade. Make spirals by turning the crank
How to Cook Zucchini Noodles
I cook my zucchini noodles two ways. I either saute it stove top or I toss it in the microwave. Either should first place your zoodles in a colander and sprinkle it with salt. After use a cheese cloth or clean kitchen towel to remove any access moisture from the zucchini noddles. This will help keep your noodles from being watery and watering down your sauce.
Tasty Zucccini Noodles (Zoodles)
- 2 large zucchini 2 pounds
- 1 teaspons garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon sea salt
olive oil if sauting
- Add olive oil to a large nonstick skillet over medium-high heat. Throw in the zucchini noodles and sprinkle with garlic and onion powder. Cook for about 1-2 minutes.
- Once oil is hot, add zucchini noodles and cook for about 1-2 minutes. Toss them with a pair of tongs so they don’t overcook.
- When finished, sprinkle with salt.
- Add zucchini to a microwavable bowl. Sprinkle zoodles with garlic and onion powder.
- Place bowl with zoodles in the microwave for 1 1/2 to 2 minutes.
Serve these zucchini noodles with your favorite tomato based pasta sauce or some shrimp in an alfredo sauce.
