It’s the summer and what could be better than a slab of ribs. My mom loves ribs so we went to pick up a slab. I was hoping hubby would put the ribs on the grill but it didn’t work out that way. No worries, I have an instant pot. Instant Pot Baby Back Ribs to the rescue.
Though I love baby back ribs off the grill I’ve been dying to make ribs in the Instant Pot. And then the opportunity presented itself and I was so excited. I realized I hadn’t made ribs before. The grill is really hubby’s domain. So, I had to have hubby give me his recipe. It’s tried and true and has been tested and perfected over the last couple of years. And guess what? It worked in the instant pot too. Yay!!
The one thing I wanted to make sure I did was marinate the ribs so that it really would soak up the flavor of the seasonings. Hubby told me pulling the membrane off was also an important part of making sure the ribs soaked up a lot of flavor. I like my ribs to fall off the bone. Hubby side eyes me for that. If that’s not how you like your ribs make sure you use a trivet.
Instant Pot Baby Back Ribs
Makes 4 – 6 servings
- 1 teaspoon Kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 cup apple cider vinegar or juice
- 1 1/2 cups of BBQ sauce (I use Sweet Baby Rays)
- 2 tablespoons brown sugar
- 3 -4 pounds baby back ribs
Tools: large bowl, tongs, instant pot and trivet (optional) – baking sheet
Rinse ribs and remove membrane.
Mix salt, pepper, onion powder, garlic powder and paprika.
Rub ribs with salt mixture then cut into sections of 3 ribs.
In a bowl mix apple juice, BBQ sauce and brown sugar.
Marinate ribs for 30 minutes in 1/2 of the BBQ mixture.
If using trivet, place trivet in pressure cooker and pour the rest of the BBQ mixture over the ribs.
Place ribs in the pressure cooker.
Turn pressure cooker on high for 20 – 30 minutes (adjust the time to your preference).
Allow to natural pressure release.
Preheat oven to 450 degrees Fahrenheit.
Remove ribs from pressure cooker and place on a baking sheet.
Brush a generous amount of liquid from instant pot onto ribs and bake in oven for 10 to 15 minutes.
And there you have it hubby’s ribs but in my instant pot. LOL. Try it with my No Mayo potato salad. Or mac n cheese and collard greens. Whatever way you have it, I hope you enjoy it.
