So, I’m a carbaholic. Despite many attempts to cut out carbs I just cant’t seem to do it. I mean what’s more comforting than a deliciously butter baked potato? A baked potato that’s done in 20 minutes instead of an hour. These Instant Pot Baked Potatoes are great for everything from an indulgent chili baked potato to a healthy garden stuffed baked potato.
Depending on who you ask potatoes can pass as a healthy carb. Why? Because it’s rich in potassium, provides fiber and is low in calories (according to the USDA).
There was a sale on potatoes and so I jumped on it. Hey we have 6 people to feed in this house. A mommy’s got to do what a mommy’s got to do. So since I had a ton of potatoes, it was the perfect time to try out several potato recipes.
Instant Pot Baked Potatoes
- 3 pounds of potatoes, washed
- 1 cup of water
Tools: trivet, pressure cooker
Place trivet in the bottom of pressure cooker.
Add 1 cup water.
Then place cleaned potatoes on trivet.
Press manual (high pressure) adjust time to 10 minutes.
Once finished, allow pressure cooker to natural pressure release for 10 minutes.
Then manually release any additional pressure.
Allow to cool and remove potatoes.
Top potato with whatever makes you happy.
