Easy and quick Instant Pot BBQ Pulled Pork recipe for when you’re not willing to let go of Summer but you are short on time.

Summer isn’t over and this Instant Pot BBQ Pulled Pork is the perfect way toast these last beautiful Summer days. In our house, BBQ Pulled Pork and Summer are synonymous. And as we head into the Back to School routine and other activities I am trying as hard as I can to hold on to those wonderful Summer memories. Having your friends and family over for a delicious meal is a great way to make the most of those last days of Summer.
And after spending last weekend at the BBQ Food truck festival, I had to make some delicious BBQ pulled pork. Though there’s not as much down time now, I knew I could still throw together some BBQ Pulled Pork. The way to get it done quickly was to use the pressure cooker. It’s an easy way to pull together a recipe that would typically take hours to make cooked in about an hour.
I do want to warn you, when short on time, you might be tempted to just dump all the ingredients in the pressure cooker and walk away. DON’T DO IT! Season, season, season. Making sure you season the pork right from the beginning, will make this dish even tastier. Actually, you should always season your food right from the beginning. It really adds to the flavor of the entire dish.
Instant Pot BBQ Pulled Pork
Makes 6 – 8 sandwiches
- 3- 4 pound pork shoulder
- 1 teaspoon mustard powder
- 2 teaspoon paprika
- 1/2 teaspoon cumin
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 2 1/2 cups BBQ sauce
- 6 -8 hamburger buns
Tools: 2 small bowls, pressure cooker, slotted spoon, large bowl
In a small bowl, combine mustard powder, paprika, cumin, 1 tablespoon brown sugar, 2 teaspoons salt and 1/2 teaspoon pepper in a small bowl. Rub spice mixture all over the pork.
Cut pork shoulder into 4 large chunks and place in pressure cooker.
In a bowl, mix remaining brown sugar, apple cider vinegar and 2 cups of BBQ sauce. Pour mixture over pork.
Place lid on pressure cooker and lock. Make sure pressure valve is closed.
Manually, set to high pressure for 60 minutes. Allow to natural pressure release for at least 10 minutes. Then open value and allow rest of pressure to release.
Use two forks to gently pull pork apart. Then use a slotted spoon to remove pork from pot and place in a large bowl.
Mix remaining BBQ sauce into bowl with shredded pork.
Serve this BBQ pulled pork on hamburger buns with some corn on the cob. We love elota or Mexican street corn with this. The creamy and saltiness of the corn goes great with the sweet brown sugar in the BBQ sauce.
