IP Candy Bar Cheesecake

Happy Halloween. We don’t get a lot of trick or treaters for Halloween. So, there always leftover candy in addition to what the littles bring home. To put that candy to good use I started adding it to cookies. This year it’s and Instant Pot Candy Bar Cheesecake and it’s delicious.

Do you have tons of leftover candy after Halloween? Even when the candy we’ve bought is all gone the kids come home with much more. They get candy at their school party, and the soccer coach and then candy from trick or treating. A great way to use up that candy is to make all types of sweets.

Since I’ve been using the Instant Pot more I decided it was going to help me with this challenge. I loved the smooth texture of the Key Lime Pie I made in it so I was excited to make cheescake. This year it’s all about the Candy Bar Cheesecake.

I left hubby decide what type of candy bar he wanted and he suggested Twix. So … I’m using twix (both right twix and left twix) to make this cheese cake. Of course, you could use Snickers, or Almond Joy or any other candy bar you’d like.  I don’t suggest using skittles but who know I might figure that out.

IP Candy Bar Cheesecake

The Instant Pot helped me get this done in about 45 minutes (start to finish) but don’t worry you can find oven directions below.

Instant Pot Candy Bar Cheesecake

Makes 6-8 slices

Ingredients

Crust 

  • 1 cup of graham cracker crumbs (6 -8 graham cracker rectangles)
  • 2 twix bars
  • 1 tablespoon sugar
  • 4 tablespoons butter, melted

Candy Bar Cheesecake

  • 16 ounces cream cheese, room temperature
  • 1/4 cup sour cream
  • 1/2 cup sugar (brown or white)
  • 1/4 teaspoon salt
  • 1 tablespoon flour
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 regular size twix bars, cut into chunks

Tools: food processor, 2 large bowls, mixer, springform pan, pressure cooker

Directions

Add graham crackers and candy bars to food processor.

Pulse until mixed and crumbly.

In a bowl, add graham cracker mixture sugar and butter.

Wrap the bottom on the springform pan in foil.

Spray the springform pan and press graham cracker mixture into the bottom.

In a large bowl add cream cheese, sour cream, sugar and salt.

Using a mixer combine well.

Add flour and vanilla to cream cheese mixture.

Then add eggs one at a time and mix well.

Add chopped candy bars and gently mix into cheesecake mixture with a spatula.

Pour cream cheese mixture on top of graham cracker crust.

Place trivet in pot and add 2 cups of water.

Gently place springform pan in pot on top of trivet.

Cheesecake In Pot

Press manual and set timer to 35 minutes.

Allow to natural pressure release.

Remove cheesecake from pressure cooker and chill for 4 hours.

Gently slide a knife around the edge of the springform pan to loosen the cheescake.

Oven Directions:

Preheat your oven to 325 degrees Fahrenheit. Bake for 50 minutes.

Turn oven off and open oven door.

Let the cheesecake rest in the oven for and hour.

Chill for 4 hours.

Top with additional Twix or whipped cream. Yum.
