Instant Pot Italian Pot Roast

Pot roast is typically one of those slow simmer recipes. Especially, if you chose a bone in piece of meat. The longer it cooks the better it gets. And when it falls off the bone … Oh my, so delicious.

Of course, that’s what makes this a great recipe for a slow cooker or pressure cooker. The steam in the pressure cooker keeps the meat tender and tasty. This is especially  true if you are using a tougher cut of meat.

That’s right, don’t shy away from those tougher cuts of meat when using the pressure cooker. Those cuts of meat can still be delicious and tender when cooked in the pressure cooker or slow cooker.

In my house, we are typically short on time (but not on appetites) so we make several meals in one day. The pressure cooker makes getting delicious meals for the week done quickly.

One thing that really makes this recipe delicious is the flavor of the beef. Seasoning the beef well before you put it into the pressure cooker. Below is the pressure cooker I use at home.

This Instant Pot Italian Pot Roast recipes takes all the pressure of you to make a delicious Fall meal. The pressure cooker will do hard work for you.



Instant Pot Italian Pot Roast

Makes 6 servings

Ingredients

  • 3 pounds beef pot roast
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cumin
  • 1/2 teaspoon allspice
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 6 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 carrots, sliced
  • 1 yellow onions, chopped
  • 2 stalks celery, sliced
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup dry red wine
  • 2 bay leaves

Tools: small bowl, large cutting board, pressure cooker or slow cooker



Pressure Cooker Directions

In a small bowl mix cinnamon, allspice, thyme, salt, pepper and garlic.

Use a knife to make small holes in the beef.

Gently rub seasoning mix onto pot roast with clean hands.

Press saute and add 2 tablespoons of olive oil to the pressure cooker.

Place beef in pressure cooker and sear meat on all sides

Once all side of meat are seared cancel saute.

Add all the remaining ingredients and secure lid on pressure cooker making sure the lid is locked and pressure valve is closed.

Press the meat/stew button and adjust time to 90 minutes (or manual, high pressure 90 minutes).

Slow Cooker Directions

In a small bowl mix cinnamon, allspice, thyme, salt, pepper and garlic.

Use a knife to make small holes in the beef.

Gently rub seasoning mix onto pot roast with clean hands.

Place a pan over medium high heat and add 2 tablespoons.

Once oil is hot place beef in pan and sear meat on all sides. Remove from pan when finished.

Place beef and all remaining ingredients in slow cooker. Cover and cook on low for 8 hours.

Serve this Instant Pot Italian Pot Roast with some creamy mashed potatoes or polenta underneath with  some yummy veggies on the side.
