Mashed potatoes are the ultimate comfort food. It’s warm, creamy and delicious. Whether this is your typical carb or a special exception for a holiday (Thanksgiving) it’s a great side dish. This Instant Pot Mashed Potatoes recipe is an easy addition to your menu.
I’d love to take responsibility for this very delicious recipe but it’s my husband’s. I’ve adapted it for the Instant Pot. You know how they say the way to a man’s heart is through his stomach? Well, funny enough that’s also the way to my heart. I love food. And a man that makes delicious food is like icing on the cake. Yum.
As a single person I typically would just pick up a container of pre-made mashed potatoes at the grocery store when I was in the mood for it. That was of course before I met the mashed potato Master. Yeah, he was trying to win me over but those mashed potatoes continued to be wonderful. So much that I don’t even try to make his mashed potatoes.
After having my husbands mashed potatoes it was extremely hard to go back to the store bought version. Let me tell you his mashed potatoes are not only delicious but absolutely easy in a pressure cooker. I typically stay away from making mashed potatoes because I seem to have trouble mashing potatoes. Crazy right? But in the pressure cooker the potatoes are cooked perfectly and east to mash.
Once mashed, add butter, sour cream and fresh herbs. Yum. I really think it’s the fresh herbs that really puts this dish over the top.
Use the leftover mashed potatoes to make latkes for breakfast the next morning.
Instant Pot Mashed Potatoes
Makes 4 -6 servings
- 2 1/2 pounds potatoes (yukon gold)
- 1 cup water (or stock) -just enough to cover potatoes
- 1 teaspoon kosher salt
- 4 tablespoon unsalted butter
- 1/2 – 1 cup sour cream
- ground pepper to taste
- finely chopped chives (optional)
Scrub and peel potatoes.
Cut potatoes into cubes and place in pressure cooker.
Add salt and water to pressure cooker.
Cover pot and make sure vent is sealed.
Press manual and set time to 7 minutes.
While potatoes are cooking, melt butter stovetop in a pan over medium high heat.
Drain potatoes into a colander.
Place potatoes and butter into a bowl and mash with a potato masher until potatoes are broken up.
Add sour cream and mix with spatula.
Add additional salt and pepper to taste and top with chives.
And your deliciously quick mashed potatoes are done.
