Instant Pot Misir Wat

We love Ethiopian food and when hubby said he was going to start working out I knew I needed to incorporate more high fiber low calorie food into our weekly meal plan. But you know me, I’m all about comfort food so it had to be a dish that really hit the spot. This Instant Pot Misir Wat (Ethiopian Spicy Red Lentils) does exactly that.

Food’s so good when it tastes good and it’s good for you.  Fell in love with Ethiopian food years ago and it’s typically one of my go to regional cuisines when I’m looking for healthy dishes to feed family and friends. Many of the recipes have tones of vegetables and are gluten free. It’s a way to feed everyone no matter their dietary restrictions.

It’s the Berber Spice that gives the lentils it’s kick. When I want the kids to partake I decrease the Berbere spice to 1/2 a tablespoon. I typically keep at least a little spice in my dishes. It helps the children get used to it. Of course, if you have friends or family that do not like spice I would suggest you leaving the Berbere spice out and adding a combination of coriander, paprika, nutmeg, and cinnamon.

Instant Pot Misir Wat (Ethiopian Spicy Red Lentils)

Makes 6 servings

Ingredients
  • 2 cups dried red lentils
  • 1 medium onion, chopped
  • 1 teaspoon grated ginger
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 2 tablespoons Berbere seasoning
  • 4 cups water or vegetable stock
  • salt and pepper to taste

Tools: 2 large bowls, pressure cooker and a mesh stainless steel sieve

Directions

Place a sieve or cheese cloth in a bowl. Add lentils and rinse with cold water removing dirt and debris.

Rinse lentils again then soak in hot water for 10 minutes.

Add lentils, onions, ginger, garlic salt and berbere spice to pressure cooker.

Pour water or vegetable stock over lentils.

Secure lid on pressure cooker, press manual and set timer for 10 minutes.

Natural Pressure Release (NPR) for 10 minutes.

Salt and pepper to taste and serve warm with injera.

Stovetop Directions

Place a sieve or cheese cloth in a bowl. Add lentils and rinse with cold water removing dirt and debris.

Rinse lentils again then soak in hot water for 10 minutes.

In pan, heat 1/4 cup of olive oil.

Sauté onions, garlic and ginger in a pan until translucent.

Add 1 cup of water or broth and berbere spice. Cook for about 10 minutes until mixture reduces.

Add another cup of water (or stock) and lentils.

Cover pan and cook the lentils until tender and done, about 15 minutes.

Remove lid. Stir and cook until thickened.

Serve Warm.
