Lentil Croquette Recipe

Don’t be fooled by this Lentil Croquette Recipe it’s packed full of flavor. These croquettes are a delight to the senses for vegetarians and non-vegetarians alike.

These Lentil Croquettes are so delicious. This recipe started as a spur of the moment thing. I’ve been working on cleaning out our pantry and I came across a bag of dried lentils. I love buying dried beans because it’s really cost effective, super healthy and much tastier.

Buying bagged beans you can avoid tons of salt and whatever else it is in there that keeps the beans from turning bad. For me it’s not only the price but the ease of cooking dried beans now that I have a pressure cooker.


The first time I made this recipe for the blog, I rinsed the beans, soaked the beans, then boiled the beans. The second time I made this recipe for the blog, I rinsed the dried lentils then cooked it in the pressure cooker. The high pressure and steam process adds a lot of flavor to the lentils before you even fry it up. Not to mention using the pressure cooker helps to avoid having to soak the lentils.



The first time I made the this lentil croquette recipe it was just part of cleaning out the pantry but since it was such a hit. I’ve gone out a bought a couple of bags of dried lentils so there are always some on hand to make. Ha! So much for cleaning out the pantry huh?

This lentil croquette recipe is perfect for the start of a meal, your main course, or a party appetizer. I’ve given it to the boys as a snack with apples. Don’t you love versatile recipes like this? Ones that even the meat lovers in your family like.

Lentil Croquette Recipe

Makes about 20 Croquettes

Ingredients

  • 2 1/2 cups vegetable broth
  • 1 1/4 cup dried lentils
  • 1 teaspoon salt
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 2 teaspoons lemon juice
  • 1 orange bell pepper, finely chopped
  • 1/2 red onion, finely chopped
  • 1 beaten egg
  • 1/4 cup parsley
  • 1 cup breadcrumbs
  • salt and pepper to taste
  • oil for frying

Tools: medium pot or pressure cooker, heavy bottom skillet, spatula

Directions

Stovetop Directions

Place first 8 ingredients in a pot and bring to a boil.

Reduce heat and simmer for 30 minutes.

Remove from pot and allow lentil to cool.

Discard any remaining water.

Add lentils to a large bowl, then add egg, parsley and season with salt and pepper.

Mix until completely incorporated.

Take a large tablespoon of lentils and roll into a ball and roll in breadcrumbs.

Heat oil in a skillet and cook the croquettes in batches, turning once until crisp and brown on both sides.



Pressure Cooker Directions

Place first 8 ingredients into pressure cooker. Close lid and seal

Press manual to cook at high pressure for 15 minutes in an Instant Pot or lentils button for 25 minutes in the Power Pressure Cooker XL.

Allow lentils to cool and discard of any remaining water.

Add lentils to a large bowl, then add egg, parsley, and season with salt and pepper.

Mix until completely incorporated.

Take a large tablespoon of lentils and roll into a ball and roll in breadcrumbs.

Heat oil in a skillet and cook the croquettes in batches, turning once until crisp and brown on both sides.

Serve the lentil croquettes with a nice crisp spinach salad or some potato wedges.
