I Love Breakfast! There’s nothing like a nice warm hearty breakfast to start the day. One of my favorite items to order at the diner are home fries. I love home fries but my favorite diner has been slacking. It no longer puts onions, peppers and parsley in its home fries. So I had to come up with a quick and easy home fries recipe to fill the void.
What makes great home fries? Everything. For me, it’s all the parts of the home fries that makes it whole. Each ingredient adds another layer of flavor that perfectly compliments the potatoes. Now you might be looking at me like I’m crazy. C’mon !! It’s just potatoes.
But done right, these potatoes can transform your morning. It’s warm and comforting and the perfect compliment to eggs and bacon or an avocado drizzle. It’s happiness on a plate. And on cold mornings that’s exactly what I need. How about you?
This quick and easy home fries recipes is perfectly seasoned with nice a crispy potatoes. I typically use russet potatoes but a nice red potato or new potato will work too.
Quick and Easy Home Fries Recipe
Makes 4 -6 servings
- 1 1/2 – 2 pounds russet potatoes
- 3 tablespoons olive oil
- 2 tablespoons butter
- 1 medium onion, diced
- 1 large orange peppers, diced
- 1/2 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon cumin (optional)
- 2 tablespoons parsley
Wash and scrub potatoes well and into 1/2 inch cubes.
Add cut potatoes to a large pot and cover with cold water. Add a little bit of salt and bring water (in the pot with potatoes ) to a boil. Then allow to boil for another 2 minutes.
While potatoes boil, add 1 tablespoon of olive oil to cast iron skillet or heavy bottom pan.
Once oil is hot add diced onions and peppers. Saute over medium heat.
Season with a little salt and pepper. Stir occasionally until soft. Remove onions and peppers from pan and set aside.
Drain potatoes in strainer and allow to cool (about 5 minutes).
Heat remaining olive oil and butter in cast iron skillet or heavy bottom pan over medium high heat.
Once butter has melted add potatoes to the pan in a single layer and allow potatoes to cook for 4 to 5 minutes. This will allow the potatoes to brown and crisp.
Once browned, carefully, flip the potatoes on the other side and allow to brown.
Add onions and peppers to the pan with the potatoes and stir gently. Season with garlic powder, salt, pepper and paprika.
And your hearty breakfast is finished. Serve with eggs and some baked bacon or your favorite sausage.
