This Rainbow Instant Pot “Boxed” Cake to Celebrate the Beginning of Spring is something to shout about. This jazzed up box cake makes you feel like sunshine doesn’t it?

Tuesday is May Day and what better way is there to celebrate Spring than with a beautiful rainbow cake. So, I whipped up this Rainbow Instant Pot Boxed Cake to Celebrate the Beginning of Spring.

Don’t look at me that way. I know technically Spring began March 20th. But if you are on the East Coast where I live, it hasn’t felt much like Spring. At least not until lately. Which makes me think maybe that’s why in Europe they don’t celebrate the beginning of Spring until May 1st. In Europe May 1st is know as May Day and it’s the celebration of Spring.

And what better way to celebrate Spring than with a colorful cake. And if you make the cake in a pressure cooker it’s so quick you can spend time doing something a little extra. Like adding color. Or adding color and a rainbow. Since this recipe is all about saving time, I jazzed up this “boxed” cake with milk and butter. My little was super excited to see it. And I was happy to be able to give him something special to take to school to celebrate Spring.

Rainbow Instant Pot “Boxed” Cake to Celebrate the Beginning of Spring

Makes 3 mason jar cakes or 1 (7 inch) bunt cake

Ingredients

  • 1 box white cake mix
  • 1 cup milk
  • 3 eggs
  • 1/3 cup softened butter
  • food coloring of your choice

Tools: large bowls, measuring cup, hand mixer, 3 small bowls, pint mason jars or 7′ inch springform bundt pan

Directions

Grease the inside of mason jars or tin with cooking spray (not olive oil).

Place 1 cup of cake mix into each bowl.

Add 1 teaspoon of preferred color to each bowl.

Mix color into cake mix until well combined.

Using a 1/4 measuring cup, place one cup of each colored cake mix in mason jar.

Add 1 cup of water to inner pot.

Add trivet in inner pot and place mason jars (or bunt pan) on trivet.

If using a bunt pan press manual and set to high for 25 minutes. Allow to natural pressure release.

If using mason jars press manual (high pressure) for 15 minutes. Allow to natural pressure release.
