I’m in love this Roasted Beet and Apple Salad Recipe. Now, I will be honest with you, I think salads are comfort food. I know not everyone thinks that but just hear me out. Some of the best recipes that are super simple to make and absolutely delicious are salads.
I love a fresh Spring mix salad with a warm sunny side up egg and bacon crumbled on top. When you cut into it the yolk just oozes out. Yum! I’ll eat that for breakfast any day.
Oh, have I got your attention now don’t I? Salads don’t have to be boring and bland that actually can be anything and everything you want in one delicious bowl. Like this Roasted Beet and Apple Salad. The roasted beets are so silky and smooth and the apples provide a sweet crunch.
Oh, and then those walnuts. That takes the crunch level to another height. Then smooth it out with the creamy, salty blue cheese. Don’t like blue cheese? No worries this recipe works perfectly fine with goat cheese or any other creamy salty cheese.
It’s also a great recipe to make for holiday parties or with some leftover roasted chicken. That’s the best thing about a good salad. It’s delicious so it always works as a great addition to any to event or meal.

Roasted Beet and Apple Salad Recipe
Makes 4 Servings
- 4 medium beets
- 2 tablespoon olive oil
- 1 large apple, cut into match sticks
- 2 cups spring mix (spinach)
- 2 tablespoons walnuts
- 1/2 cup blue cheese (optional)
- 1/2 cup olive oil
- 2 tablespoon white wine vinegar
- 1 teaspoon dijon mustard
- 1/4 teaspoon salt
- 2 cloves minced garlic
- 1 tablespoon lemon juice (fresh)
Tools: baking sheet, sharp knife, fork, salad bowl, salad shaker or a container with a lid.
Preheat oven 425 degrees F.
Wash beets and trim of stems (do not cut beets).
Gently prick beets with a fork.
Rub beets with olive oil and place on baking tray.
Bake for 45 minutes to an hour until beets become soft.
While beets are roasting add mustard, vinegar, lemon juice, salt and pepper to a small measuring cup or salad shaker. Whisk in the oil.
Add garlic and place in a re-sealable container/salad shaker in the fridge.
Once beets are done, remove from oven and allow beets to cool.
Slice beets 1/4 inch thick.
Add Spring mix to a large salad bowl, then gently place sliced beets on top and sprinkle match stick apples, walnuts, and blue cheese over Spring mix lettuce.
Then drizzle mustard vinaigrette over salad and serve.
